Letover Egg Bake

From time to time I like to make what I call a "Leftover quiche." But it is NOT a quiche. But I make this quite a lot. And that is what is for dinner tonight. I cracked about 10+ eggs and beat them. Then I cut up some leftover pork I had and some leftover ham. Threw that in. Then I added in a chopped onion, an 8 pounce package of shredded cheddar cheese, and a can of diced tomatoes. I added a little bit of pepper, some garlic powder, and some no salt seasoning mix that I get from The Dollar Tree. I also added a can of evaporated milk. This is really just an egg bake, not much unlike something you would make for a breakfast egg casserole. It is always very tasty. Bake it for about an hour on 350 and voila! Dinner is served.

That sounds really good. I make an egg bake on occasion and it's always different depending on what I have on hand.

Same here. Of course, my dinner egg bakes are always different than my breakfast ones. When I make one for breakfast I usually do sausage and I will also throw in some hash browns. It's good no matter what.

@just4him Me too. I have a couple of naysayers around these parts, but most of my dishes may not SOUND good, but they are actually delicious. A lot of people have a hard time thinking outside the box. They don't know what they are missing.

@porwest I like onions but I can“t eat them because I will have stomach trouble. If I put onions, I give them to my better half and there would be a lot of scratching food to do

This is so true. Within reason, you can put pretty much anything you want in them. They are very good. Combine the fact that I love eggs, it's win-win.
