Well, of course I am always trying to be as creative as possible. Well, that's the aim. Many times I at least have made it a goal to make @NJChicaa puke. Seems to be working. It's actually a bit of a challenge now. So here we have it. Another egg bake for dinner. I put in 15 eggs and an entire 8 ounce bag of cheese, a can of diced tomatoes, some mushrooms, a chopped onion, and some meatballs... And of course there are some seasonings I added. But here's the kicker. The eggs expired on December 7th. Hey, I did the smell test and cracked each egg separately before I added them to the dish. One thing I have experienced over the years is that expiration dates are designed to tell STORES when not to sell something anymore. It has nothing to do when something is actually expired. If you do not hear from me again we will have no further need to have this discussion. Wish us all luck and pray and make sure NJChicaa gets a puke bag or two delivered.

I worked in the food industry for MANY years before doing what I do now. Let me let you in on a little secret. Expiration dates are simply shelf lives. Now, while most people think that means after that date it is no longer good, it means STORE SHELF life. It is more of a marketing thing in most cases. A store is responsible for not overordering. A company generally does not have to refund expired goods to a store that overbought and could not sell said item. So the manufacturer still gets paid, and it is up to the store to decide what to do with the product. A lot of gets donated to food pantries and you will find a LOT of expired food doled out at food pantries. The food itself is not necessarily inedible, or no good. It's just gone past the date it can be SOLD.

@Nevena83 You just have to personally know what the true shelf life of something is. I mean, obviously if you open a jug of milk and it smells bad and it's curdled, it's definitely "expired." A piece of meat you have had in the freezer for two years is PROBABLY expired. But even with canned goods, you can still eat the contents YEARS after it was labeled "expired."

@porwest That's what my brother says, but I think some food must be respected, right?

Lord, you're brave I'm with you on expiry dates. I largely ignore them but for some reason, not with eggs, especially if they're all watery and the yolk is runny. I hope you survived this dish :)

My husband always eats stuff that I wouldn't touch because it's too old. The dish, however, sounds good.

@LindaOHio Well, I AM a man, of course. That thing dangling between my legs at least tells me so.

I always say, heck, nowadays there are so many preservatives in things, you could plop a lot of this food into a time capsule and it would still be edible 100 years from now.

That sounds delicious. Mostly I would not cook the egg that is expired. But sometimes when I buy eggs they do not have the date stamp. So I cook them anyways

You're too funny. I don't worry too much about the expiration dates, now if I get sick cuz I ate somethin old then I check if I have any more of that product to check dates.

Actually, except for the expired eggs, I think that the dish sound really delicious. You are just like my late husband it seemed he could eat anything no matter how old it was and he always made me gag.

I don't pay attention to the expiration date on eggs. I was surprised to find there was one. I haven't had a problem with eggs and I buy them by the 5 doz. box from Wal-Mart. It's cheaper that way. I also buy between 2-3 boxes a month, so you know I eat a lot of eggs. Your egg bake sounds delicious!
