Sharing food

Well, we are all kind of in our own little ruts, staying home, getting a little bored. I notice we all like to share food ideas, so I will tell you what we ate tonight.
I made "meat loaf" of ground beef and ground turkey. Except I made it into meatballs and baked it on a baking sheet.
The meatballs will be more versatile for us, and less likely to be boring. We had meat balls, fried potatoes and steamed spinach tonight. Tomorrow we will have meatball sandwiches with peppers and onions. There will still be enough left for two more meals. Good portion control as well.
I like getting ideas from you guys to help me use my foods up wisely, so feel free to share.

We like meatballs done in muffin pans.
I usually make up a little bisquick and pour that into the bottom and then put the raw meatball on top of it. So you get your meat as well as your starch in 1 bite, all you need to go with it is a vegetable.

@marlina Thanks, we never ate much ground beef while we were raising our son because he didn't like the consistency of it, but once he went off to university, we found this little treat, and a couple of those meatyballs will fill you right up. If we have left over bacon, I would take a short piece and make and X with it and melt a dab of cheese on it for my hubby, I don't like all of that on it.

Meatballs, you just can't go wrong with it - spaghtti would be another idea

It would be a great idea if my husband ate pasta. We will still eat them and enjoy them though.

@GardenGerty We hoped to be allowed to go out this week, but the restriction for senior has been confirmed also for this week, no shopping at all for us.

Next meatball meal will be meatball sandwiches. I think I have some colby jack on hand. I have peppers and onions and was going to simmer those a little in some tomato sauce to go on my sandwiches.

Yes, some recipes call for bread crumbs, but I use oatmeal. I wish hubby felt more like eating.

I did not make quite that many, but it is a good idea. I made enough for four meals for the two of us.

I do not think I have ever made meatloaf in a crockpot. I have made meatloaf wrapped in foil and cooked on a grill. Cooking can be a fun hobby.

I planned for left overs. I stored them in a container in the refrigerator. The following day we had "meat ball sandwiches" I will have two more meat ball meals when all is said and done.

We have been doing one meal a day, the rest is on your own or clean up leftovers. I have another day of left over italian to eat. Tonight will be grilled pork ribs that I found on a decent sale.
