That sounds delicious!
Does your cornbread happen to have creamed corn in it? I've had it like that before and its' delicious.

@CarolDM I wish I could be more inventive with my corn bread, but one of the family members likes to put it in milk and eat it that way, so I can't.

@ScribbledAdNauseum Oh I see, I never have mine with milk. But I am not a milk drinker. Maybe you could make a small pan just for you.

I sometimes have that for my meal. When we have corned beef, I would add a small can of pork and beans. No one at home likes it, just me, waheehee.

I had a salad my husband as pop tart because we had a late lunch. But a few days ago I made chili and yesterday I made corn casserole which I like better than corn bread although doing keto I shouldn't have either one.

@CarolDM it is. I have leftovers in my fridge is your want some. It's easy to make too. A can of cream corn and a can of regular corn. Cup of sour cream and a box of jiffy corn muffins mix. Some add butter and an egg which I forgot but it was still good.
Maybe the cornbread is easy too? Not sure that I've made that but I've done the jiffy muffins and I've had the cornmeal but can't remember what I made with it.

I actually bought Goya pinto beans the other day. Can't wait to eat them. I like to fry them up in a skillet with some onions and then have a sunny egg on the side.
Your post made me crave for some cornbread. I usually buy it from my local supermarket or from Whole Foods. Never tried making it at home.

It was rainy here, maybe 50 degrees by afternoon. Your meal is one of our favorites, yummy!

I like Pinto beans especially because they are highly beneficial for my blood type 'O' diet!
