Homemade Mac and Cheese for Dinner

Sometimes less is more with our meals. I love mac and cheese. It was always a favorite of my son's as well. I made it often. Baking it, homemade, is taking it to another level. I always enjoy this baked macaroni and cheese. It’s a little bit chewier, with lots of great cheddar cheese flavor, and I love the way the top gets crispy in the oven. Plus it’s so easy. You just boil pasta, mix with grated cheese (any cheese you have on hand), a couple tablespoons of flour, and seasonings, put it in a casserole dish, and pour the milk over it. That’s it. No messing with white sauces or tricky steps. This will be dinner this evening. I am also cooking green beans mixed with ham. And bread to toast as well. Garlic bread toast is another favorite. It goes with many of my meals. Enjoy your evening everyone.

That sounds like a delicious meal. We must be on the same wave-length for supper thoughts today, I made a baked penne. Boiled pasta, just different additions after that is all. Enjoy your supper.

Many cook this from a box. Faster perhaps, but I prefer this baked dish instead.

I like homemade mac and cheese. I made some a while back, but I made too much for one person and ended up throwing a bunch of it away. I would have frozen it, but the freezer is pretty packed.

@CarolDM I don't like to keep things more than a week or so in the fridge..it can pick up bacteria.

It's been a while since I have made homemade mac and cheese. But when I was growing up, I was the "official" mac and cheese maker for holiday meals. My family really liked the way I made it. Not bragging but I have to admit, I was pretty good!

@CarolDM - Indeed! Have you seen some of the TV chefs do like a "gourmet mac-n-cheese"? Like instead of using cheddar they use gouda or some sort of gourmet cheese. Have your ever watch Tyler Florence? That guy makes the "ultimate" of everything!!! I used to watch his show when I had cable TV. I don't get to watch it any more. But I loved him! You should see his "ultimate mac-n-cheese". It'll make you drool!

@CarolDM thanks for the compliment Carol. I don't know about being an excellent cook but I do enjoy cooking and am all into comfort food and easy preparations. I learned how to make Mac % cheese from my aunt so I think of her every time I make it.

I always keep mac and cheese around here. But it's of the frozen variety. I love the crusty crust on top when you get it right.

@CarolDM I'm kind of lazy when it comes to cooking these days. When I play "good pirate" with the kids (a role I enjoy), I bring macaroni and cheese to their ship (the play structure). I have discovered that kids like the mushy inside more, while I go "aargh" and eat the slightly burnt crunchy crust on top.

@CarolDM I bought a box of it at the supermarket and still have it on the shelf to use. I have never baked it. I have done that on my stove before and no baking. I like garlic bread with my spaghetti.
