Attempt at a three-ingredient cookie

I am best with things that have five or fewer ingredients. When I buy some pre-made food, if there's a long list I don't even bother to read it, I just put it down. Cooking with fewer ingredient is just because I don't like fiddling around with little bits of lots of things. I found a channel on YouTube called "Bigger Bolder Baking." Actually it should be called Healthy Simple Baking. She has a lot of great, easy recipes. This one's three ingredients were: coconut, sugar, and coconut milk. I knew there was likely to be trouble when I opened the coconut milk I had bought. It was thick and acted like whipped cream, instead of pouring like hers did. However, she made it very clear "coconut milk, not coconut water" so I gamely measured the right amount. It actually did work to stick things together, and then I baked the cookies (kind of like macaroons). They tasted great but fell apart when you tried to pick them up. I think I'll call my version "spoon macaroons". I guess if you can eat it and it tastes good, it's not a failure, right? Have you made any surprises lately?

Our is a place of coconut and we have lot of recepes with coconut milk but we do not get the coconut milk in canned form but prepare it at home from freshly grated coconut.

Yes hear also not get coconut milk, of needed extract from coconut.

I have a book of recipes that all have five ingredients or less. They don't include items that are in most pantries. I can't be bothered with complicated recipes either.

@petatonicsca I didn't explain it well. There is a list at the beginning that what they think will be found in most pantries. So although a recipe might have 4 main ingredients, it will also have salt, pepper, perhaps flour, sugar the most people would have already. So there might be 8 or more ingredients rather than actually four.

I've returned to gourmet cooking since the virus. My only surprise was that I overdid the use of parmesan cheese in my shrimp scampi.

I know one recipe using coconut and sugar, using both we prepare burfie but I don't know preparation details this is my mom recipe. It is very tasty we prepare when we get huge coconut from our trees, my mom prepare this recipe. Hope you prepare good dish using those.. But sure give your update of your dish taste .
