Tuna Salad Sandwich for Dinner

These hot summer days call for light meals. Has a few cans of tuna in the pantry.
Earlier I mixed up some tuna salad with mayo and pickle relish and a little lettuce on the bread as well. I like it to marinate a little while in the refrigerator before I fix a sandwich.
Sometimes I like a good tuna melt. But today I kept it simple. Toasted the bread and added the tuna salad. Dinner is done.
What about you, do you like tuna salad? I also like chicken salad sandwiches.

I like both tuna and chicken salad sandwiches and we prepare it almost exactly how you prepare it but it's eaten here more as snack than a meal since rice is the staple. I'm also fine eating it as a full meal.

@CarolDM me too, there are times I make my own mayo using a hand blender, it saves me a lot and I could get more for what I spend. I'm toying with the idea of making pickle relish but have not tried yet.

@CarolDM Would you like to know what I have converted to? Instead of preparing with mayonnaise, I like sour cream. There is a woman on YouTube known as Aileen's Kitchen whose tuna salad recipe is awesome. I like to use a little salsa as my own personal preference.

We're think along the same lines. I cooked a regular meal for lunch/dinner, but I'm making potato salad now for later on. I just didn't want anything heavy today.

@CarolDM I've got some boiled eggs cooking to add to it after everything cools. I made the mistake one time of putting hot eggs with mayo and got a slight case of food poisoning!

@1creekgirl I used to add eggs and mustard but not any more. Never thought about the eggs being too hot for the mayo.

I don't eat fish any longer, but I used to love tuna sandwiches--not much of a mayo fan either--so it was always a tiny bit of mayo and lots of mustard--I do that still with egg salad sandwiches

I'll eat it if there's a zombie apocalypse; but otherwise I prefer chicken salad. Hubs likes tuna salad.
