Frugal cooking--Easy lunch

I have not been great about weight loss while in self-isolation. I still haven't lost the weight I regained with this, but I am still under 200 pounds. That's a good thing. I made a quick lunch of two slices dark sourdough rye toast, and two fried (medium) eggs. There was just enough runny yolk to suit me. I also had a wonderful apricot, and a cup of black coffee. Cost: ~$1.00 That should last me until dinner. I'll probably have the escalivada a la Marga (@marguicha) for my dinner tonight. I think I also have a piece of smoked salmon that I can eat for my protein with it. What are you having/did you have for victuals today?

Breakfast was a yogurt smoothie. It had frozen strawberries, banana and spinach in it. Sweetened a little with Stevia. We had a mid morning appointment for hubby and were away from the house for lunch. A long way away. We each had a sourdough bacon parmesan cheese and garlic burger, or some such. Split a small order of fries. When shopping I bought each of us a bottled iced coffee. We will eat something light and cold tonight, involving grapes, since I got more.
I had escalivada (mainly the eggplant and the zucchini) inside a hamburger bun I heated for lunch. I was very happy with the bread because I had lost it for over 2 days. Now my garage keys are lost, but they won´t rot. I was interested suddenly in the word escalivada and it is a dish from Cataluña. This is when I love the Wikipedia. Tonight I was going to make something with some spinach, but were past its prime. I had left it too long waiting for the COVID to go away. So I cleaned it and sorted them and tomorrow Luna will have human breakfast with broth from the rests of the roasted chicken I had. Anyway, I made a banana smoothie and called it a day.
