I brought my downstairs neighbor some homemade banana bread last week and she loved it. She went to the grocery store a few days ago and asked if she could get me anything. I asked for bananas. I want to make some more as I only had 1 slice of it before giving the rest away to others.
She brought me perfectly yellow bananas without a spot of brown on them. Normally that's how I like them but this doesn't do for banana bread. You need them super-ripe and very brown. I keep staring the bunch down willing them to hurry up and ripen. There are some brown spots but I don't dare try to make another loaf yet because I don't want to waste the ingredients if it doesn't turn out delicious. The last batch was BANGING.
Maybe tomorrow. Maybe Tuesday. We'll see.

My Mom always said that if you but them in a brown bag they will ripen right up. I don't think I have ever tried it.

Banana bread is delicious. But, as you say, the bananas have to be very ripe.
