An expensive salad!

My niece's 6th birthday is on Wednesday. My sister isn't going crazy with a big party this year due to the current virus situation. It will just be a small group of family and she is ordering pizza. She was going to do antipasto too and told me not to bring anything but I said I'd make my famous Carmine's salad which is basically antipasto chopped up over lettuce. I am still being too lazy to go to the grocery store so I just placed an order through Instacart. I know that the prices are a bit higher than normal but nothing too crazy that I don't feel comfortable paying. Still, that being said it is a $40 salad to make! You need romaine, cucumbers, tomatoes, radishes, red onion, salami, fresh mozzarella, mild provolone, kalamata olives, green olives, and pepperocinis just to make the salad. Then you need fresh lemons and extra virgin olive oil (among other things I already have on hand) to make the dressing. Oh well. It is always a crowd pleaser and I know that my sister will appreciate the effort and expense. I don't think anyone in this family has ever made it. They always leave it to me. hahaha I guess that is a compliment?

I'd love this salad, but I can no longer consume salami. But, an antipasto salad will go over good, for your niece's Birthday gathering.

@NJChicaa I like pizza, but I don't like to fill up on it. I would rather have a couple small pieces, with a large portion of salad to go with it:)

That looks great! Expensive but fresher and probably more than what you would get if you had ordered it from a restaurant. Definitely a compliment .

That looks absolutely delicious! I have to tell you that I looked up the recipe that you make for Paula's mac and cheese and made some last week. It makes a large amount, so it will do for 2 meals here, the second batch was thawed out for supper tonight. Thanks for that tip, we love that recipe.
