3 kinds of ginger

In this post, i want to share about gingers. There 3 kinds of gingers. They are
1. Yellow ginger, it is widely used as a spice in cooking, especially for local consumption. The taste and aroma is quite sharp. Medium size rhizome with yellow color.
2. Red ginger, This type of ginger has a high essential oil content and the most spicy taste, making it suitable for pharmaceutical and herbal ingredients. The smallest rhizome size with red skin, bigger fiber than ordinary ginger.
3. Elephant ginger, It is the most preferred ginger on the international market. The shape is big fat and the taste is not too spicy. Yellow to white rhizome flesh.
In Indonesia, ginger is sually for making drink
because it is able to provide a feeling of warmth at night, especially in mountainous areas or at cold night.

I am not sure if we use the yellow or elephant . . . but for sure I have never seen the red at our markets. I love the taste of ginger . . . ginger and garlic seem to make a good combination - which I mainly only use for Asian dishes.

We use ginger as well. I have't heard about ginger drink. It is mixed with tea though

We drink Ginger Tea or Ginger Water, simply boil crushed ginger or just put it in a cup of hot water. It is very good as a fever prevention/cure but not advisable for persons taking prescribed medicines or pregnant women or persons with heart ailment.

@nawala123 It is good to make candied ginger because it is sweeter and more tender.
