I think I read about something similar another myLotter cooked up, but this is my version of it.
It's Chicken Potato Salad. I first made potato salad, goodness, it's been a long time since I made that.
I boiled cut up red potatoes, then mixed that with mayo, mustard, chopped sweet pickles, a little sugar, (of
course!), onion powder, and salt and pepper. Oh, and paprika.
It was pretty good, but then I threw in some chopped rotisserie chicken. Even better. And finally boiled some eggs and added them.
It really is yummy. I've made potato salad, chicken salad, and egg salad. I've just never mixed them all together.
Y'all got any good suggestions for spicing up an ordinary dish?

I've made chicken salad but never combined it with potato salad. What do you pit in your potato salad?

Sounds good. I love chicken. I make a deconstructed lasagna. Much easier than doing all the layers.

@1creekgirl You can make it with rotini or rigatoni (pre-cooked)...Add cottage cheese (I use that instead of ricotta), mozzarella, meat sauce (add some sausage for more flavor), mix together and bake. Add some parmesan too if that's your jam. It's very open to interpretation.

sure sounds yummy! the hubs'd ne'er eat such, he's anti-chicken these days. i wish he'd come with a warnin' sign.
all sorts 'f thingies can be used to spice'p'n a dish, dependin' 'pon the dish. therefore i've nothin' to offer regardin' such. 'dmit bein' a tad surprised ya use onion powder 'nstead 'f diced onions? back'n the day we liked't with jalapenos, but our guts now jest say no, lol.

My husband doesn't do well with onions (I still like them cooked), so I use a little onion powder or minced onion.

I have lately become addicted to finely cut up leeks. Some days ago, I cut up onion, placed over it a piece of fish spiced with just salt and pepper, sprinkled it with the bits of leek and added some oil. All this went to the microwave oven covered with another dish for 4 minutes. It came out delicious.

I forgot, I do use celery, too. Tomatoes sound good with it.
