How long is pepperoni good, anyone know?

I made something a little different for lunch. A cheese and pepperoni chaffle. This one only has those two ingredients. I used mozzarella.
I thought at first that I ruined my mini waffle maker but the cheese scooped right off the griddle. I've made something similar to this before in the oven. It can be a snack or meal. I didn't need much and I've been wanting to make this ever since I saw a video on it.
Edit: well no one is answering my question but it must be fine since it didn't make me sick. There's no expiration date on it and I'm sure I've had it three or more months already.

It's a type of sandwich made mostly with cheese using a waffle iron. Most of mine are made with egg, cheese, zucchini, and onion.
It's a keto word.

It's very good. It's filling too unless I'm really hungry then I might need one more and it does my keto foods list.

@LadyDuck it doesn't look funny, smell funny, not taste funny yet. My husband bought a new package and the expiration is six months.

'ccordin' to the u.s.d.a website, 3 weeks if'n kept refrigerated 'fter openin'. i'll keep fingers crossed such didn't make ya ill. ne'er 've made/eaten a chaffle 'f any sorts.

I didn't get sick and they tasted fine. I prob won't throw them away just yet but maybe sooner than later.

@crazyhorseladycx well I'm glad you looked it up. But I wondered until I realized it wasn't bothering me. I do have a stronger stomach than most so wouldn't suggest anyone else keep it for that long. I don't understand why they don't our an expiration date on the PKG though.

I make it another way to by putting shredded cheese on a cookie sheet but it needs parchment paper under the cheese or it will stick. Do you have parchment paper there?
I'll get a picture.
So put parchment paper down and maybe was paper would work but I'd think the waxy side might melt. Then cheese then one pepperoni then more shredded cheese. Bake at 350 I think for four to seven minutes until melted. If the edges get burnt it's okay.
Let cool a little and eat the bites with a fork.
It won't work without the parchment paper. The cheese will stick to foil and most pans. the parchment paper comes in a roll like Sarah wrap if you have that.
