Delicious Oven Roasted Pecans

Growing up I remember my Mom roasting pecans in the oven fairly often. We had pecan trees. So we had many dishes with pecans. Pies, cakes, casseroles, and roasted pecans. All so very good. Roasting pecans are very easy. Not a healthy way to eat pecans, but it is all about moderation. You add salt and butter and let them roast about 15 minutes. Longer if you like them a little crispy. I rarely make these but when I do, I always think of my dear Mom. Place the nuts in the oven and bake for approximately 10 minutes. Remove the nuts from the oven and toss to coat with the melted butter.   Sprinkle lightly with about a teaspoon of salt and shake the pan to distribute them evenly. Place them back in the oven and continue cooking for another 10-15 minutes. Remove them from the oven when they are toasted.

@CarolDM I make a mix of roasted mixed nuts with butter, rosemary, and cayenne as an appetizer for parties. Soooooo good.

Out here, pecans are on the expensive side, so how wonderful to have had your own pecan trees! Ohhhh, I can only imagine eating those toasty warm .. . oh yum!

Mmm, sounds so delicious. I got to only buy mine at store. Found some candied ones at Walgreens just 1.2 oz. solo good. It's nice to remember Mom. I remember mine when I see the Moon which we saw the Super Moon together, so when I see the Moon now I smile & remember.

Never was a fan of them, but I don't like most nuts. And that doesn't mean yours aren't very good...for those who like pecans.

I love toasted nuts. That is a precious memory. I think the smell I most associate with my mother is coffee. We always had coffee brewing in the morning.

Sounds yummy, Carol. I'm addicted to nuts but these might fit in with my keto foods if I eat it in moderation too as most nuts aren't on the list.
