Delicious lunch

We are not eating out. It keeps us safe and it saves us money. Hubby likes Mexican (restaurant) food. I doubt that any of it is really authentic. Anyway, he gets hungry for that type of food.
So I layered a layer of refried beans, a can of chili and cheddar cheese in a baking dish and heated it in the oven. Served it with tortilla chips.
Garnished this lovely layered food with chopped onions, tomatoes, sour cream, salsa and a relish made from jalapenos I grew this summer.
It was all so good. And not exposed to the public. And not putting a hole in our wallet.

A few cafe's are open. Subway is open, but mostly you have to look hard to find an eating establishment that is open.

I miss having someone else do the prep and clean up, but I do not miss spending the money and I am never disappointed by the flavor and seasoning.

@GardenGerty I forgot two things. I am supposed to start steamer before adding the final ingredient. I forgot that. And I am supposed to whisk the final ingredient fast and well kinda within 10 to 15 seconds. Since I forgot the steamer, I had to load with water, place on the stove, and water takes more than 15 seconds to come to steaming level. Kinda I knew it was a disaster. Depressed. LOL

That sounds good to me!
We virtually never eat out either, except for special occasions (my birthday lol) or when on holiday. And we never buy take-away food either. I can't believe the amount people spend on things like that. It all keeps the economy going though I guess!

We used to eat out way too much, and often were disappointed. Covid has helped us break that habit. It is very expensive.

@GardenGerty I am petite. I have a roommate who is very tall and places items where I cannot find or reach. The refried beans are clear in the back of our highest cupboard. She claims she cannot reach and did not place them there. She said we should go out and buy some. For real?
