Tonight's dinner menu

Hubby is going away for a few days so I will be having dinner by myself tonight and tomorrow. Maybe even Thursday. I am gonna fry up some chicken breast. Debating whether to marinate it in Island Soyaki sauce or to do it with a mix of mayo and Dijon mustard. I will saute some zucchini for the side. I may even open up a can of tomatoes. There is still some panettone left. I will have that for dessert with some herbal tea and gourmet cheese. And I also have some baklava that my MIL shared with me. I should have enough left for tomorrow night's dinner for sure but not for Thursday. I will have to figure out that dinner tomorrow or on Thursday perhaps once I know for sure when hubby will be returning home.

Sounds like a good plan to me. When my husband traveled to conventions or conferences, I ate dinner with friends or my family. Otherwise it was junk food.

Sounds like you have it figured it out. My husband like to make meal plans on the fly. Like last night, he considered cutting the chicken. Which is fine by me, but time slipped away from us. Before we knew it, it was 10 o'clock, and the household daily chores hadn't been done. He had to work today. So we decided to warm something in the microwave instead.

Having a meal plan is good but I understand that being busy all the time, we will resort to something quick.

It's a good idea to know what you will have for dinner in advance. This way if you don't have everything you need to make that dinner you can go to the store and get it before it's too late.

@lovebuglena Yeah, I know. In a walgreens world, that would work. Hubby and I tend to go grocery shopping once a week. And base our meals on what we buy that week. When he gets home from work, he wants to drink. So, unless I catch him right at the right time.... I'm the one doing the last minute shopping... in a wheelchair... Yeah, that's why it's rare we do anything last minute.

I left the light on in the hallway when I went to sleep. Still had a hard time falling asleep and ended up waking up a few times in the middle of the night. Sometimes to pee but sometimes just waking up for no reason.

Panettone is an Italian cake-like bread filled with raisins and candied fruits. It's usually sold around the Christmas holidays.

Hubby's leaving you for a couple of days? I hope you'll be okay. There's no major blizzards or anything headed your way, is there? I would hate for you to get trapped at home by yourself because 9 feet of snow fell.

@moffittjc He went to the rally. He walked to the Capitol with others. He did not partake in the riot of course.
