Stuffed Peppers Tonight 01/05/21

The picture does the dish no justice. The lighting makes it look like the back of the dish is browned. But trust me, this is just a lighting issue.
I took the tops off of the green peppers and chopped them. Then I halved the peppers and blanched them to soften them up a bit. Then I chopped some onion.
I put some ground beef into my smaller Dutch oven and browned and drained it. Then I added the chopped pepper tops and chopped onion. Cooked that for a bit. Then I added some minced garlic, salt, pepper, and some garlic powder for good measure.
I also added a little bit of soy sauce and Worcestershire Sauce. Then in went some oregano and Italian seasoning.
I cooked that up a bit more then added some cooked rice I precooked yesterday for the dish.
Then in went a can of tomato paste.
Set the oven to 350 degrees and greased my casserole dish. Put the halved peppers into the dish and then slathered on the mixture on top of all of that. I sprinkled a little bit of Parmesan cheese over that and will bake it for about an hour.
Just before it comes out I will add some shredded Colby Jack cheese to it.
I used to just use whole, topless peppers and simply stuff them. But I think halving them tastes just as good and works out just fine. I tried the mixture before I topped the peppers, and I think this night's dinner of stuffed peppers will be delicious.

That looks great!
No idea what is for dinner tonight but it might be the left-over pork tonkatsu from lunch. My bet goes to that.

It is a Japanese dish. Basically, it is deep-fried breaded pork cutlets.

@porwest No, I am. However, I do consult him. If he needs to help me with something, he has to want to do it. Otherwise, we wind up fighting and not really eating anything.

@Aquitaine24 I think it mostly is, but not sure HOW healthy. I mean, you have the green peppers, onions, tomato paste, and rice. Maybe the worst part is the ground beef?

We had stuffed peppers the other night and I froze the left overs. Tonight I used them to make a vegetable beef soup.

@Namelesss I think I will. Even still, knowing the ingredients, I bet even just making a stuffed pepper soup would be delicious.

My main job is/was working in a hotel kitchen so I look at loads of food related stuff.
Your pic possibly isn't the best choice.
I would have probably have gone for a pic of the peppers showing the inside rather than them cooking...just my opinion.
I did make stuffed peppers quite a bit...sliced the top off scraped out the seeds and white bits then they went in the oven.
Whilst they were in the oven I did the filling whatever that may be...minced beef/lamb/turkey...maybe did some couscous with herby chopped tomatoes...and the list goes on
Generally used home made (at work) seasoning and fresh herbs but dried are ok too.

I enjoy stuffed green peppers and will come right over after working tonight too have a taste. It sounds scrumptious and looks good too.
I'm doing a round robin with mylotters in a figurative sense as I read their discussions this week and maybe a while after that too.

@porwest sounds like a plan. You can stop by for a side dish. I'm cooking zucchini and summer squash tonight I think. I'm not making dessert. It you could have a chopped kale salad.

Your recipe is similar to mine for stuffed peppers. I've never had mine with Parmesan and Colby-Jack cheese, but that sounds much better!
