Dinner-- Pork and Mushrooms

It all started with the pork roast I made and shared here at the site yesterday. I paid $3.77 for the meat, and I am going to get many different meals out of it using that one roast.
Tonight, I took some of the meat and the gravy that I made, and cubed up the meat, adding mushrooms that I purchased and sauteed and froze a couple of weeks ago.
I took two servings of pork and mushrooms put them together in a pan to heat up chopped up some fresh parsley for the top. I had mashed potatoes that I was able to serve on the side, along with a small spring mix of greens, and tomato for a salad.
I have another serving of this for lunch either tomorrow or the following day.

I paid about $4.00 for this hunk of meat. I cooked it in about one-third the amount of time that I normally would have cooked it in more...

I understand. I do that to myself sometimes and I don't have anybody else to cook for!

@TheSojourner It happens, if there is something I like I pretend that "this time I will be fine" and it's never the case.
