Chopped Cabbage and Egg

I made a very simple and quick dish for lunch today. It's chopped cabbage with egg. The cabbage should be the main ingredients but I fell short for it as I removed those leaves with dark spots. I already cracked the two eggs so I just put it all resulting as if the egg becomes the main ingredients as shown in the photo.

I must try this. Looks yummy But you need sufficient eggs for it to bind. Right?

If you want the same consistency in the photo, two eggs will be enough for a small head cabbage. Though, I prefer more cabbage than egg because what's in the photo is not really what I want but I'm short with the cabbage. I added a little amount of cornstarch to the mixture.

@allknowing Yes, that's right as egg alone becomes thinner when added to the chopped cabbage.

I often prepare omelettes with vegetables, I never tried with cabbage, but with zucchini or mushrooms is very good.

I only use green onions and we can also add chilies in omelet.

the fact that the price of cabbage is quite expensive nowadays, then quality is not that good cause you said there were dark spots

Thanks! Now I got an idea to finish the leftover cabbages and carrots from the Vietnamese spring rolls. I thought of making fried rice but I didn't have enough rice.
