Garden Fresh Salad

The lockdown is in place. Unfortunately for me and my daughter, the food supply depleted. Twice now we've been to the bank for cash. The first time, the traffic was horrendous we had to abort the highway and take another route home. The second time, the bank was closed. Ha ha. So that was why there was a pile up Monday! We deserve it for not tuning in to the news. Today, I have to concoct something to sustain nourishment. So out in my garden I went and harvest some Romaine lettuce. Added some chicken strips, salted egg, and a tomato. Caesar salad for a dressing. That would be my lunch.

My daughter doesn't like Romaine lettuce because of the after taste bitterness. I love it though. It's cooling in the ref now. Lunch in an hour. My daughter is probably eating steamed spinach (locally called kangkong) with a dash of lemon and soy. With rice.

@RasmaSandra Yup. Sometimes, we cook the leaves adobo style. It means saute garlic, add the leaves, a little vinegar and a little soy, with a dash of pepper and dry bay leaf. Quick cooking and very nutritious.

Yup. For fruits, I picked some Jamaican Berry (locally called aratelis). That was my breakfast, with a slice of bread with peanut butter.

Garden fresh salad is anytime better than that is bought in the market. This pandemic is dragging on without the sight of getting over in near future. It is at its all time high at the moment.

The current wave is actually worse than the initial wave, according to local medical practitioners. My daughter, the doctor, ordered me and her sister to use the KN95. She wore one all the duration of her few hours in our home. I asked why. She said the variant is more lethal.

@msdivkar The KN95 masks my daughter purchased online are all right. We wear the masks only when we are near each other. Otherwise, we just keep the distance and sit tight on our respective spots in the house without the masks on.

@eileenleyva That is very true but difficult to use the mask all the time. It is suffocating sometimes.

Thank you. I ate it all in no time. Not even lunch time yet. Trying to turn my garden into a vegetable patch. Removed some of the decorative santan and gumamela. I have a papaya that thrived despite the heat. Hope to make a harvest soon.

@rakski Plants need sunlight and water everyday. Plus a little tender loving care. . Plants are beneficial to the health also in the sense that these gives oxygen we need and secretes the carbon dioxide. I have kangkong stalks in water bottles. The leaves have grown and I could put some in sinigang. Lemon does not grow easily in our climate. Perhaps calamansi is better. Bell pepper is also difficult to grow. But ginger is easy.

It's always nice to be able to go out to our garden and harvest something to eat. Your Romaine lettuce look very green and your salad looks so mouth watering.

I do my best to tend to my garden each day. Once, I whispered to the Romaine lettuce 'Hurry up and grow more leaves so I can eat you.' My daughter heard and reprimanded me - 'Not a nice thing to tell your plants.'

@gamayngbaki Gosh, that is true. My voice is naturally very loud. To my shame many times, especially at the confessional box. Everyone hears my sins.

@Bubba90 I'll probably cook the new leaves in sour broth called 'sinigang.' It's a dish with meat or fish.

Growing our own food can sustain us. Glad you are eating a healthful salad. If people wear their masks, a lot of the hardships can be stopped

After a long pandemic year, many of my friends have their own vegetable patches in their yards now. At least two friends have grown their own farms, complete with free-range chickens. That means everyday supply of eggs. Yes, with lots of papayas and bananas, we could easily exchange crops to sustain our food. I have four varieties of vines - like spinach.

@eileenleyva true! You can get a huge pack of lettuce for less than a hundred pesos. Add whatever's in your pantry and drizzle with prepared dressing. Heaven!

I have the local kangkong and Japanese kangkong in my vegetable patch. Easy to grow. Easy to cook. Filling to the stomach. Beneficial to the health.
