But it's not big as you may think ha ha. I'm done with my task at the kitchen. I've started it last night but I was not able to finish the whole thing because I'm already tired. On day time, I continued the work and finished up to the mixture for preservation and combination of ingredients only as I have other engagement to attend with. Tonight, the pickles were packed at their individual containers and in few days it can be consume. Actually, it can be eaten right away but it would be best to allow the shredded papaya to absorb the vinegar mixture for a more flavorful taste. In photo are some of the ingredients prepared.

Ummm " atchara " ( pickled unripe papaya ), love that on barbecue and java rice as side dish. I never tried to make that on my own because it's mother who always makes it for us, it's a lot of work just looking at it congratulations. I agree with you that it has to be aged for a few days.

@ZedSmart yes sati babi it's good that you were still able to make good use of them. I had tasted versions with raisins and another one from Negros Province with " ampalaya" ( bitter gourd) , the one you are making is pretty much how we do it too.

I forced to make the remaining fruits I salvaged from the dying tree which we put down because the roots were no longer capable to hold the soil. I missed java rice and sati babi.

@louievill Yes, I was looking for greens to incorporate and ampalaya was my option but missed one because of hurrying because it's noon time when I chanced at the supermarket and it's too hot outside.

Unfortunately I was not able to incorporate anything green to it even just a green bell pepper as I'd forgotten it because I was in hurry at the open market since it's too hot during afternoon. Thank you.
