Spinach Souffle for Dinner

Was looking for something different for dinner. Went through a few recipes and thought about Spinach Souffle. It has been years since I made this dish. Thankfully I had all of the ingredients. What a great dinner. There are many ways to cook this one, I used frozen spinach, since it was all I had on hand. I have also made it with a meringue topping that will brown when it cooks. Didn't have enough eggs for that. Maybe next time.

@CarolDM We don't either. If my oldest daughter lived closer she would keep me robbed. She has 3 boys that all love eggs. They will eat boiled eggs for a snack anytime they are offered.

I'll be right over, what time's dinner??I

love spinach souffle. I haven't made it from scratch, but usually just get the Stouffers stuff...hmm I will be going shopping later this week..maybe gonna put that on the menu. I have made spinach frittatas and they are awesome too.

I wish you could taste it, turned out good. I have bought Stouffer's too and it is great. Decided to go for it today. Never made spinach frittatas. But they are great.

I only eat spinach fresh and baby leaves. I don't know why, but once it is cooked I don't even like the look of it
