Stuffed Bell Peppers for Dinner

When I popped into the supermarket last week they had bell peppers on sale so I grabbed a few intent on making some stuffed bell peppers for dinner one night. Tonight was the night! I stuffed with a seasoned ground meat and rice mixture and they came out very nice. The peppers were big and plump and filled the hubby up. I have enough pepper left to make a mean omelet in the morning. I'm looking forward to that! I'll add in some sausage, bell peppers, onions and who knows what else! I had fish fillet with lime sauce for dinner. I like to make Jambalaya with bell peppers, particularly the green ones.

Now that is an idea I haven't thought of--stuffing with jambalaya. I made more of a dirty rice mixture which was good too.

@kareng We both like bell peppers, grilled, skin removed and covered with olive oil are excellent to serve with the Italian antipasto.

I have never cared for tomato soup and I know it was because my mother never fixed it. Now with acid reflux, I have to be careful about tomato products, especially late at night.

@kareng veggies like potatoes and peas are added in a mashed way. One can add carrots too and then spices are added.

Stuffed bell peppers are always a good idea. No dinner for me yet. There are a couple of viands to choose from. No idea what to have yet.

That sounds so good that even though I do not like to make big meals for myself I am going to have to make some stuffed pepper soon I love them. I usually add sweet Italian sausage, chopped tomatoes, garlic, and onions and rice,

I had all that except the chopped tomatoes and the sausage. I have never fixed them with sausage, but now you have me wondering how good that would be! I'll have to make them with sausage next time!

Last night I had bratwurst with some macaroni and cheese and some normandy blend veggies. As for stuffed peppers, I am a HUGE fan of these. Good eats!

We made hamburgers tonight. I wanted to use up the buns I had and then after getting them in the skillet I realized we made sloppy joes a few days ago and used the buns then. So we had our burgers on regular sliced bread tonight.

@kareng I always try to make extra grilled chicken so I have it for leftovers. Throwing it on top of salad makes a good lunch or dinner. However, now I'm in the mood for stuffed peppers

The omelet was wonderful this morning. Hubby really enjoyed it. I threw in onions, garlic, red peppers and green bell peppers, celery and a little bit of parsley along with the sausage.
