Finally Made It

I bought the ingredients a long time ago, put them all in one Tupperware on the table, but it's only now we were able to make it. What took it so long? One, celery. Either we don't have it, we forgot to buy it, or we used it for something else and forgot to save some. Two, instead of boiling then shredding chicken, we now shred the leftover breast part of lechon manok (Filipino roast chicken), but it's been awhile since we bought lechon manok. The other ingredients are carrot, potato, cheese, pineapple tidbits, pickle relish, raisins, salt, pepper, mayonnaise, and salad macaroni pasta. (Salad macaroni is shorter than elbow macaroni. Don't know if it exists in other countries.) We call this Chicken Macaroni Salad, and we can eat it after meals or in between meals. Sounds familiar?

I had it for dinner last night, instead of rice, because I was feeling lazy.

@merrybelle2021 I skip rice meal from time to time. But I eat bread or pasta meal as a substitute.

Your dish sounds interesting. I enjoy macaroni salad as a side dish during the summer. Especially when I'm cooking hot dogs or hamburgers on the grill. Never thought of adding chicken slices to it. Just may have to try that

We've never had it as a side to hotdogs and hamburgers, either, but my sister once added lettuce to hers. I hope you like adding chicken to it.

We like it because it's crunchy. But we only use the stalk, not the leaves.
