Frugal living: My go-to meal lately

I'm not sure why, but this seems to be my go-to meal the last few weeks. Perhaps, it's because it's so simple, and I don't have to think. One potato, one egg, three breakfast sausages, and a little oil, and spices. It's relatively inexpensive, filling, and I like it. I'll have a big salad or a plate of vegetables tonight. I'm eating fried eggs most mornings right now cause its Spring and the hens are busy. Tasty for sure.

I could eat that a lot too. I fried a duck egg, made sausage gravy and fried potatoes for dinner tonight.

That looks good but I would probably swap out one of the sausages for some baby spinach and onions.

I didn't have any. And these are a chicken sausage that I found that are very lean and three to a serving for very few calories. I do eat a lot of spinach and onions, by the way!

@HomewardBound I eat a lot of vegetables, as well. Even when I'm slim I'm still a bigger person. And now with my age and some other health issues, my extra 20 lb is not as much an issue to me anymore. For me it's not so much sweet as it is extra carbs in the form of bread or popcorn! Of course, the popcorn has to have butter.

The way the potatoes are cooked in your photo, we call it "bhajia" in my country. I like your meal. It is well arranged on the plate

Normally, I'd slice some onion in that pan, too. LOL I have half a mind to make it again tonight, but know I need veggies.

@TheSojourner It sounds like a nice and filling meal and the salad to add to it is also good. I think if we find something that works for us then why not continue with it.
