Tonight's leftovers

Tonight we had tomato basil soup, along with scrambled eggs with onions and cheddar. We have a bit of guacamole and a cream cheese spread with olives that add some veggies to our menu as well. Maybe by Monday I can cook some chicken or some salmon or just something else different. Meanwhile it is nice to be able to eat without too much cooking.

I had a lonely pork chop, and yellow wax beans and cucumber from my garden. Didn't feel like tempting fate by digging up another potato just yet.

That sounds like a good meal. I get tired of cooking, too. That's why I always have leftovers and freeze them so on days I don't feel like cooking, I can just pull something out and microwave it for our meal.

If the leftovers are something that freezes well I certainly do freeze it. Sometimes I make extra stuff on purpose to have a base. Like rice, for instance.You can build a good meal on rice.

@GardenGerty If you eat rice, that would make a nice base for another meal... I can't eat rice normally... One of my brothers fixed that for me by telling me a lie about what mom made rice from. As long as nothing reminds me of what he said, I can and will eat it. But if anything reminds me of what he told me, my meal is done and anything I ate, I give back. When I'm cooking hamburger, I always cook lots of it and put most of it into Ziploc freezer bags and freeze it for later. That takes one step out of making most pasta dishes.

Sometimes we freeze some of what we make then have a ready meal for the future when you don't want to spend too much time in the kitchen.

It takes about as long to cook for three meals and freeze two as it does just to cook for today.

I had not heard of, or thought about tomato basil soup until I was served some in a restaurant. Now I try to have it often.

We are using the grill outside as much as we can and having some fresh fruit on the side. Left overs are always good.

I like how you go pick up just a piece or two of fruit and use it up for a meal almost immediately. I am sure it is nice to have a nearby market.

It is Monday. I still have one more round of leftovers of a pork roast, then I can cook chicken or whatever. It is still great to have all this food prepared.
