Good morning from this side of the planet. I had a short day at work and at 10:30 AM only, I got free. Today I had the one-on-one session with the middle school child from 10:30-11:30. That session is canceled as the child is not keeping well. I got a last moment message from the parents in the morning. The reason for his sickness was not mentioned. I hope it is not something concerning and he would be able to join me on Friday.
It's 11 AM here and it is a pleasant day with sun and clouds playing hide and seek
. It is cool and pleasant after a night of light showers and drizzle. I enjoyed the morning walk today with my husband.
I would be in cyberspace for a while and then enter the kitchen to cook lunch. It is a simple and quick lunch menu today. I am making rice with soya chunks. We will have it with cucumber salad and onion raita( finely chopped onions in curd with chili and coriander leaves).
I have ordered for my organic veggies and expecting the delivery by late afternoon. Then I have the chore of cleaning and arranging them in fridge. I have ordered oyster mushrooms and that would be the menu for dinner tonight.

I need to make IEP( Individualised Education Plan) for him for another two weeks and I also need to make a set of worksheets and activities and send them to the parents through email by Sunday. I will do a little each day so that I am done on time without any last moment stress. A lot of thought goes into planning the program and making a worksheet to suit his needs.
Now I move on to notifications and then later reading your discussions

I had a good walk for 40 minutes and we covered around 5 km. Just finished my lunch. I have to clean the kitchen now but I wanted to mylot for some time.

@Butterfingers Today I could go for slow jogging for one and a half rounds of my apartment complex. I was very proud. First time jogging since covid infection. Now I have to include some weight strength training back to my exercise regime.
I am happy that slowly I am getting back to my normal exercise routine. I need to gain three more kilos back and my weight training should help. Lost a lot of muscles in the corona and I have to get the back.

That is quite some update. The school homework is quite significant it seems.
Here we are trying to gradually increase our walks abd physical activity.
We are on a cautious side and avoiding public places unless required

The sad part is that even two doses of vaccinations are not proving enough in many cases and masking is still needed.
It looks as if things would not be normal for 1 to 1.5 years more.

I have a lot to prepare for individual needs of every child I handle keeping his overall development in mind. The session might be for 45 minutes but I spend at least four times that to prepare for one session.
Better to avoid public places and take all precautions. Virus is still lurking around and many countries are seeing rise in numbers again.

We made Kadhai mushroom. It's an Indian curry preparation with rich curry using cashew nut paste. We added onion, bell peppers, onions and tomatoes to it. We had it with hot chapatis.

We were growing oyster mushrooms a pretty interesting activity. We even made pickles with them. The place where my husband learnt how to make them promised a market but never kept their promise

@arunima25 Does this lady have a farm of mushrooms? We had a few stacks Neither my husband nor I ever thought of getting a market for our mushrooms and depended on this set up. When they failed we did not go around asking. Marketing is not in my blood.

@allknowing She has farms in acres with organic fruits, veggies and now mushroom. She also has farms for milletes and spices. I get all supplies from her. She is a very close friend of mine. She is IIM grad and left her job at corporate to start this venture.

How do you prepare oyster mushrooms? (I've never eaten any of them.)
Once in a while I will buy button mushrooms. I clean them in cold water and then slice them thickly. Then dip them in a milk and egg mix, then dredge them through flour and spice mixture. Then I fry them in hot oil. (I don't make them often because as soon as I start cooking them, Pretty starts eating them.
I have to remind her to leave some for me.

Whatever recipes can be made out of button mushroom, can be made with oyster mushroom too. I generally get button mushrooms. Sometimes they have oyster mushroom. It looks different and is bt bigger and elongated than button mushroom. But it tastes the same(just a bit more fleshy). It is a little expensive than button mushroom because it is considered to be healthier.
Pretty enjoys your preparation. Sometimes I have to remind my family to leave some for me when it is a delicious thing on the table

Sometimes I noticed that even if our working hours are unexpectedly reduced we still end up doing tasks. Looked like you have an interesting lunch. How did you cook the soya chunks? Did you fry them?

Very true! We always have something or the other to take care of.
I boil them and strain them. Then fry some onions, tomatoes, any veggies like carrot, capsicum, beans, potatoes etc( it's optional, I did not add any today), sliced green chillies, coriander leaves and add the soya chunks to it. Add ginger-garlic paste and a little bit of spices and salt. After a while we add rice and water and let it cook.
