Frugal Cooking: Late breakfast (vegetarian)

United States
September 14, 2021 11:26am CST
I had the last of a baguette that I would have had to throw away, so this morning I decided to use it as the base for my breakfast. Topping it with the tomato, squash, and garlic mixture I made the other day, which I heated, it made a fairly low calorie breakfast. I topped it with a little bit of Parmesan cheese that I crisped up in a pan and a slim baby broccoli lightly grilled. I have enough for two! Care to join me?

I cannot guarantee that the second half won't be eaten by the time you get here. You mean that you would eat my concoction? Without complaining that it had a piece of garlic in it or you don't like broccoli or whatever other things I get around here when I post food! LOL it ain't Burger king! Nobody can have it their way!

@FourWalls me too! I have all of this baby broccoli and I think that I am going to roast it with fresh garlic and olive oil in the oven.

Thank you so much! And thank you for the inspiration for what I just posted. I just took a picture of two shelves in my pantry.

Thanks! It really is delicious. I did end up eating the entire thing, which means I can skip lunch and then have an early dinner of leftover cabbage, carrots and corned beef. :-)

I would like to taste for sure. I have to prepare a dessert for after dinner... I am lazy today, I will find a quick and easy something to make.

I have some watermelon I'm probably going to make into a quick Frozen sorbet type dessert with fresh mint.
