Another deer for the freezer

Hunting season started here in NC on Saturday. For years when he was younger, my husband loved to deer hunt....he had several deer dogs and would spend a whole day hunting with his buddies. The local high school always knew many of the teenage boys would skip school that first day of hunting season. That's just the way it was. Over the years Dale finally gave away his deer dogs and now he only does still hunting. He has several deer stands, well, his are actually deer condos which are stand alone structures that he built. In fact, right now he's behind the shop out back cleaning the deer he just shot. He'll soak it for a couple of days, then cut it up, grind it, and we'll pack it in bags for the freezer. I didn't grow up eating venison, but now I really like it. It's more flavorful than beef and healthier also because it's leaner and hasn't been shot full of antibiotics or growth hormones. Just bullets. Aw, don't get irked with me. That chicken and hamburger, sausage, bacon and steaks you enjoy had to die somehow. And my husband never killed an animal just for a hobby. He always made sure someone was going to eat it. It's okay if you're a vegetarian, but I believe God put wild animals on this earth to help feed us. And I'm thankful for every meal. Do you like venison? I know many of you do. What about other wild or exotic animals? Have you ever tried barbequed raccoon? I don't recommend it.

I was highly excited when I worked out what the little buildings were in the paddocks in France. They were deer hides and we saw a lot of them. We don't have them here.

I'm pretty picky. Everyone in my family eats fish. I will only eat tuna in like tuna noodle salad. Everyone around me eats venison and I just don't like it. They over the years have tried to cook it a bunch of different ways and didn't like any of it. They know I like summer sausage so when they made venison sausage they tried to slip it past me as summer sausage and I didn't like that either. I think it tastes a lot different than summer sausage but they all tell me it's exactly like summer sausage but I knew the difference when I took the first bite.

It does taste different, but maybe the venison you tried wasn't cut or cleaned properly. I can't eat it if it's not.

@WomanWarrior1969 We cooked bear one time and it wasn't bad. Haven't had it in meatballs.

@1creekgirl My family always took it to this butcher that everybody used because he did such a good job especially with the venison sausage. I don't know it's like Im the odd duck in my family I'm the only one who doesn't eat that or fish. But I've had bear meatballs and I actually liked them. I almost couldn't tell the difference between the bear and the regular meatballs

I think he soaks it in water, I really don't know. I don't ever watch him clean it, either, lol. I just help pack it, cook it, and eat it! He said it's really important how it's cleaned so it doesn't have that wild taste.

@1creekgirl I can relate to that wild taste. That was what got my hubby out of hunting actually. We went to a wild game supper at another couple's home and I tasted alot of different foods, but it just seemed like everything had that gamey taste to it. After that I was no longer interested in eating it. He used to cook his pheasant in orange juice, which made it alot more mellow. He liked to make rabbit, and only stopped because I don't eat it and our son, who loved it, is a grown man out on his own now.

@Juliaacv That's funny because years ago, Dale brought home some samples of wild game he had eaten at one of those dinners. He talked me into trying "pheasant" which was actually barbecued raccoon. It was horrible!!!

I am against killing for sport, but I am fine killing animals to eat. Humans do this since the beginning of times.

@1creekgirl Humans were not created to be vegetarian or, even worse, vegan. Hunting is part of the traditions, men hunted, women took care of the houses and the kids. All animals we eat are "killed", no matter which one and some live a worse life than wild animals that are hunted. At least wild animals are free.

I feel the same. My husband used to hunt and kept the antlers, but he always made sure someone got the meat. Now he only hunts for meat that we can put in our freezer.

It has been a while since I have eaten deer, but to me it always tasted more beefy than beef. My mind is having fun with the idea of a deer condo!

Venison is good, but i haven't had it often. You are right about deer being healthier. Although personally, I couldn't shoot a deer, hunters are necessary and keep the population under control.

I'll eat chicken or beaf, just fine. I'm not a huge fan of fish, and I can't bring myself to kill an animal. Even if it could be used as food. Rabbits are high on the list of animals I refuse to eat, because I had three as pets. Enjoy your meals you'll get out of it.

I used to hunt deer when I was a teenager but quit about ten years ago. When reports about Chronic Wasting Disease in the local deer population started circulating, I decided I'd rather not take a chance. When Pretty was little, she always asked what the meat we were eating was... When it was deer, I told her we were eating Bambi. She went around telling people she loved eating Bambi. Some people were pretty shocked!

@1creekgirl Yes, it is. The Conservation Department now tests the deer that are harvested and destroy the ones that are infected with it.

Lovely photo, When I was a little girl my dad had friends that hunted, Occasionally they would give him a side of deer and he and mom would cut and prepare the meat for the freezer and we had some really good meals mom made,

I don't care for venison; but it could be the way that the people processed and cooked it. I've never had barbequed raccoon.
