I wanted something different this morning. I made a grilled cheese sandwich with Swiss cheese and Provolone on a multigrain bread. Besides coffee I also had vegetable juice blend, like V8.
Tonight I think I will make "stacked burrito" which is just layers of tortilla with burrito fillings between the layers. Cooked in the oven. Top each wedge with sour cream and salsa, fresh tomatoes and onions, etc.
It is time to get out the door. I was a slow starter this morning.

I am completely out of anything that I could make a burrito out of and you just had to post this ......
Now I'll have to go shopping if I want even a simple burrito.

For us it was a situation of "cook whatcha got". Stacked burrito came out good and I got rid of four dishes in the fridge. Just turned them into one.

Here those are known as Mexican Enchiladas cuz in Juarez the restaurants often serve enchiladas stacked instead of rolled.

I love both provolone and swiss cheeses. When I make the occasional grilled cheese, I use one or both of them, on rye bread which is my very favorite. Usually I just make my own bread. Often I just use a wrap, I get them at Aldi and they have some really good ones with spinach (they are green) or sun-dried tomato. For anyone reading this, you don't taste the spinach at all, nor the tomato, it's just a bonus veggie most of us need. I love V-8. It might be old school, but it's delicious.

I love shopping at Aldi. We buy the sandwich skinny breads. V8 is good to keep your electrolytes balanced.

That sounds like a good breakfast. I had tempeh on a biscuit. It was quick, easy, and it had the bonus that our girl could have a bite (of the biscuit, not the tempeh).

@GardenGerty It is soy-based and has sort of a nutty flavor. It's useful as a substitute in things such as BLTs.
