Simple Comfort Food

My husband and I have a tracker on our phones so we can see where the other is heading. That way we don't need to pick up the phone as often. I noticed that he was heading home yesterday and had to rethink our dinner plans. Because he was so close to home, I had to make a quick meal. I had purchased a rotisserie chicken earlier in the day and planned to have chicken quesadillas. He will eat them, but not a favorite. I quickly grabbed a 4 quart saucepan and melted 1/4 cup of butter and added flour, salt and pepper to it. Once the roux cooked for a little bit I slowly added milk to make the white sauce. Cooked that until it was thickened. While the sauce cooked I removed the chicken from the bone and tore it into small pieces. Added it to the sauce and let it heat the chicken and continue to thicken the sauce. We had green beans as a vegetable and served the delicious Chicken Ala King over a slice of whole wheat bread. Comfort food that cooks up quick is always a favorite dish to make. Was better than having leftovers. What is your quick comfort food go to?

That was a great idea making Chicken Ala King. Does sound like a good dinner and certainly comfort food. Those rotisserie chickens really come in handy!! My comfort food is probably meatloaf but I don't know if you'd categorize it as quick.

You know. I love rotisserie chicken and hardly ever buy it. But it's always good, and it's not even that much more expensive than buying a bird and cooking it at home. Hmm. Maybe I will get one of these very soon.

One rotisserie chicken gives us 2 meals and the added bonus of not needing to cook it is a plus!

I have a little bit of chicken left over so I can make the quesadillas for Little Miss and I. May happen on Friday. Or maybe tonight.

I’m surprised that hubby hadn’t asked fir Mac n cheese. I did buy some good extra sharp cheddar yesterday. I’ll have to make it for him next weekend when he is home. I do make stovetop Mac n cheese for Little Miss. I add extra cheese to it.

@RubyHawk my son works in a restaurant and had me bring his son so he could give him something that he made. He brought out 2 grilled cheese sandwiches and fries. They smelled so good.

@ElusiveButterfly Having a tracker on the phone is an interesting idea. Sounds good. I guess mine would be when I have a dairy meal I have toasted bread and if have cottage cheese and popcorn if make it.

Because my husband is gone for nearly a week at a time, it is nice to know where he is. Little Miss enjoys knowing his location at any time.

Probably pizza or grilled cheese..Not sure I have made Chicken A la King at home, but have had it a lot. I prefer chicken and dumplings. That reminds me, that might be good for a change. I just bought a small rotisserie chicken yesterday. Maybe I will make that over the weekend.
