Everything smells so yummy and good.

I am not even doing holiday cooking right now, but the food smells are great. Start with the fresh pot of coffee that just was brewed. Add to that a small pot of leftovers, pork loin chops with mushroom sauce, that I am warming up for tonight. Then there is the lemon. I was removing the zest from two lemons. I am using it to infuse white wine vinegar for a recipe I will make in two weeks. I learned from a sad experience, that if you are infusing vinegar and the jar lid is metal it is important to put waxed paper or plastic wrap on top of the jar before putting on the lid. I had some dill vinegar that I had infused, but when finished did not put plastic in the lid. The lid corroded. Tomorrow is back to school. We just got word that one pre school teacher is positive for covid and will stay out all week. I wonder who else became ill. I wonder if we will take off early for Christmas? With covid you can never tell.

My house smells good too! I have a pork loin in slow cooker that is seasoned with lemon and rosemary. It smells delicious! Thanks for the tip on infusing vinegar. Sorry to hear of a teacher with Covid. It is a sad situation. And now another new varient heading our way that I read about last night. They don't know if the vacinnes will be useful in fighting it or not. That could be some very bad news!

I am puzzled by Omicron. On the one hand they say it is very easy to catch, but on the other hand they say its symptoms are mild. I love pork loin. Lemon is terrific.

Does sound like it would be some good smells. Have you heard about the new covid strain? Always something new. I wonder if this will ever end.

I believe it will be like the flu and become endemic. We will make our guess at the strains and get vaccinated every year.

That is a good question if we all enjoy our Christmas holiday with the bad news reports on television about another illness wave and the high prices of gasoline and food.

What will you make with the lemon vinegar? I learned years ago that you should not cover Key lime pie with aluminium foil. I ended up with holes in the foil everywhere there was a speck of lime rind

I have a recipe I intended to try for homemade mustard. I have had it made with the dill vinegar, but it also says to try it with lemon. I may also dress some salads with infused vinegars. They also add a zip to soup. I think the lemon would be a nice addition to clam chowder. Or poured over cooked Brussels sprouts.
