I think I found the recipe for tomorrow!

I am going back and forth between serving this recipe for boneless short ribs, or chicken piccata for tomorrow's dinner. I am tending toward the short ribs, though. It's been a long while since I've cooked beef. Now, I just have to figure out whether I will serve it with noodles, or mashed potatoes. I will have plenty of carrots that I cook with it. I, generally, won't follow what the recipe states, and I will add many more carrots, as I love them so much. Though the recipe won't be super cheap to make, it will be reasonable, compared to a lot of other things that it could be!. Thanks to all for your suggestions!
These Red Wine Braised Boneless Short Ribs and easy and delicious. Cooked low and slow, this is perfect Winter comfort food!

I have so many carrots and don't open one to eat. I might give them out in my care packages.

For some reason, I have really taken to cooked carrots lately, especially when they are in some sort of a stew or sauce.

@sharon6345 that sounds good. Buttered cooked carrots always good! I also like them roasted. Have you ever roasted your carrots with a little olive oil and salt and pepper in the oven?

I haven't had short ribs in forever. I always liked the flavor of them.
