Meatless Chili For Dinner

Another cold day today. Never got out of the 40s here. That is cold for us in March. Hopefully spring will be here soon. Made some chili without meat for dinner. Often times I make it without beans, only meat and sauce. Today I went the opposite. And of course added what cheese I had and crackers as well. Very good and was perfect for this cold and cloudy day. Photo is mine.

Another cold day also here, I am planning to make a polenta with creamy cheese sauce for dinner, at least it's a hot dinner.

I like chili without beans but have never heard of chili without meat. Not sure I'd like that. We're already getting snow today. The forecast is calling for it here this weekend. I hope you don't see more snow this year.

@CarolDM Oh, I thought the forecast for your area showed you weren't getting snow now. I must have looked at it wrong.

Lately, I have only had canned chilli, What do you add to your meatless chilli?

Pinto beans, tomatoes, tomato paste (or salsa) and herbs. Cheese on top, sometimes sour cream.

I make meatless chili, but I do it in the slow cooker. Probably makes no difference, but I like the smell as it cooks!

@CarolDM I agree, any casserole tastes better for a slow cook

@Ronrybs Yes that is why I really like my slow cooker.

I do that as well. The best way to cook it, low and slow. I think it does make a difference.

I love homemade chili. I have been using ground turkey in mine. It's a bit cheaper and better for me. But like you, I have made it without meat before, but the sons who visit don't care for it that way.

@CarolDM Sometimes a friend who hunts brings me some ground venison. It's good in chili, too. When I lived out west I had several friends who hunted elk and moose and butchered it, that was their meat source along with the endless mule deer they processed. I didn't think I would like it, but ground moose is delicious in chili. Haven't had any in years.

We had homemade pizza last night and I actually ate all put two bites of my 80% full plate. Shocked. But it was so good and I really needed to eat a good amount.

We make meatless chili too. I've been thinking of making some, perhaps by the weekend. Our temps will be 40s'-50's and back in the 20s' at night time. We had leftover ravioli for supper.
