Do you like nougat?

We visited two wineries yesterday and on the way home, we called into Mondo Nougat, a nougat and nut factory. I’m not a fan of nougat or of nuts. I like cashews and pistachios but the ‘bits’ seem to catch in my throat. However, I was impressed by the number of different varieties that were available. Vince purchased a bag each of caramel-coated and hot and spicy mixed nuts. They trade as ‘Morish Nuts’ which seems pretty clever. A video was running while we were in the showroom and we could watch the nougat-making process. We thought they were adding milk or cream to the mix but it was egg-whites. It seemed too runny to be egg-whites. The other main ingredients are honey or sugar, roasted nuts and sometimes chopped candied fruit. Vince spoke to one of the helpers who said they buy egg-whites in bulk. It’s available in grocery stores here and is easier, and better, to use for meringue and pavlova than starting with whole eggs. I never thought I’d be giving anyone a cooking tip! Have you ever made nougat? Photo shows the kitchen, and the interior of the showroom.

I have heard of it but I have never had it or made it.I’d enjoy visiting this shop to try some but I’d be more excited over the decor!

The only kind I have tried has been in a candy bar, such as Zero candy bars. I've never made it. Did you get to sample it?? That would have been a nice treat!

No, I have only had it in candy bars. I guess pecan divinity might be a type of nougat.

Mom used to make divinity when I was a kid. She always said it tasted better if it was beaten with a wooden spoon than if it was mixed with an electric mixer. (I know it wore my arm out trying to make it once. I haven't tried to make it again. )

I've made nougat many years ago. It's OK. It sounds like an interesting place to visit and love those cars.

It was interesting but none of the foods appealed to me. And the ice-cream was gelato which isn't a big favourite either. But I was happy just to look around.

That video must have been interesting. I am not a fan of most candies although once in a great while I will eat dark chocolate.

I have never made nougat and I am not fond of the nuts in it. I would rather have straight up nougat. Also, I prefer taffy ..the kind you get at the seaside.

I had to look up taffy. I've heard of it but don't know anything about it. It seems the nearest to it in Australia is soft toffee.

Yes, I love nougat, both the Italian and French, both the soft nougat and the hard nougat. I made once, it makes a mess in the kitchen. Egg-whites should always rest in the refrigerator at least two days before you use them to make macarons and meringues. I suppose that those sold in bulk are "rested" already.

@JudyEv - I wanted to make macarons, I talked with the baker at a local pastry shop and he explained that "fresh" egg whites are not the best to make meringues and consequently macarons.

I don't make homemade candy of any kind. When I was a teenager and worked in the mall I worked at a place called the Peanut Shack. They sold nuts and candy which I needed to make every shift. We made fudge and turtles which were different chocolates with nuts in them. That would be a neat process to see made.

The kitchen wasn't operating when we were there. Maybe they only make it in the mornings. It was nice to see the kitchen though.

I didn't read the recipe so don't know how involved it is. I was very intrigued that you can buy egg-whites in a bag. I guess it's in a bag.

I love nougat. I so loved visiting the candy factories John took me to. Yum I loved seeing the candy made and the fact that John alway bought a bunch of it.

I’ve never made it. I’ve only eaten it in candy bars. I love that green three-wheeler. There’s a video on You Tube of someone refurbishing one similar to that and making it into a micro-camper!!
