A little belated April recipe report card

Better a week later than never, here’s my recipe report card for April. I’ve made most of the recipes except for three, due to time and running out of ingredients. Only one recipe missed the mark. So those three recipes would be added to the May recipe list I started this Sunday. 1. Vegan Pasta Primavera with Garlic Cashew Sauce—A+. This came out so good and so worth the wait to trying it a month later for the AKDinnerParty recipe of the month. Delicious. Leftovers were phenomenal and a bit hit. 2. Colette’s Smoked Sausage Frittata-A-. Though it didn’t come even close on looking the same in the photograph in the magazine, it turned out pretty good. Perfect to have at any time of the day for a scrumptious meal. No leftovers. 3. Roasted Rainbow Vegetable Pasta with Cashew Pesto and Goat Cheese—A+. Another Stella recipe with the cashew pesto sauce and a various array of vegetables. Some of the veggies I didn’t have and subbed them for what I had in the fridge. But it worked out wonderfully and tasted so good. Yum! Leftovers hit a home run across the board. 4. Scallops Mascarporone-A-. This seafood dish was scrumptious and easy to make in the skillet. The scallops came out pretty good with the mascaporone cheese covered on top. Something different for a change. No leftovers. 5. Skillet Lasagna (EatJustLikeHome)—C-. For this recipe, I needed no boil lasagna noodles for this meal. Apparently, when it came out, half of the noodles were cooked and the rest weren’t. It made the meal half-edible and half-eaten. I tossed it out along with the leftovers. This would be re-made for redemption later this summer. 6. Kaleb’s Spring Spinach Salad—A. Perfect to have on a warm or hot night that requires no cooking. Just putting a leafy green salad together in less than a half-hour. Light and airy, filling to the stomach, and healthy too. No leftovers. 7. Lighten Up Chicken Parmesan—A+. I loved this recipe so much. I only had brioche bread on hand which worked wonderfully for the chicken. It came out so good, though I ran out of sauce for leftovers to dip it in, and ate it as is. Leftovers scored high marks for this one. 8. BBQ Chicken Ranch Quinoa Bowls (Ambitious Kitchen)—Incomplete. This was one of the two recipes I did’t get a chance to make last month. I plan to make this next week. 9. Roasted Chickpeas Gyros—A-. I really loved how it was so easy and delicious to make this gyro sandwich with the pita bread. Once again, I had trouble getting it into the pocket, which cause it to fall a bit slightly. I’ve only made two gyro which came out pretty darn good. No leftovers. 10. Pesto Mushroom Chicken Lasagna Roll-ups—Incomplete. This is the 2nd recipe I didn’t get a chance to make last month. But I hope to make this recipe a week from today too. 11. Spaghetti with Chicken Meatballs with Buttery Marinara Sauce—Incomplete. This is the third recipe I didn’t get a chance last month, due to running out of sauce. So I plan to make it this Sunday, right on schedule. That’s it to wrap up my April recipe report card. I’ll post my mid-May recipe list tomorrow night.
