What's for supper? Broccoli cauliflower bake

If you get tired with my meal posts let me know. Tonight we tried a mixture of broccoli, riced cauliflower, low fat cheese, chicken and Alfredo sauce. I thought it was pretty good although the veggies were a bit crunchy. I don't understand why since I nuked them in water ahead of time and the few pieces I tried were fine. I went to the store to pick up more canned chicken but they were out. When I got home I remembered that I had out some breasts in the crock pot yesterday. Guess what? It was the exact amount I needed for the meal so I used that instead of the canned. When it was time to eat we nuked our plates in the hopes of getting the veggies softer. We have to watch how often we eat broccoli and certain greens because my husband is in blood thinners and is he eats to much vitamin k foods it thickens his blood. The pic is mine from tonight's supper. Tonight I'm going to visit my sister for a bit. I have a few things to take her. One is a creamer and sugar bowl set from my mom and the other is a light set she thought we might want for our kitchen but I decided not to use it We had work planned for tomorrow but now it's supposed to rain most of the day. Next week when my ladder person is free it may rain several days as well. I'm not happy about that.

I will not get tired of your food posts. I will read whatever you post about! You are fine. You are Marsha and I appreciate you, being you. I have baked this same combination before as a casserole. The veggies were not crunchy when they are baked. I know you enjoyed your dinner. Enjoy the visit with your sister. You are blessed.

Thanks, Carol. I am blessed. Is not spend time with my sister since about February so we had a very nice visit. She's ten years younger than me but I'd able to retire in a few weeks. I'm sure I can see more of her once she's retired if I can work it into my busy schedule.

It was very good. I used to make a broccoli casserole when I was in my twenties but I don't remember the recipe for that. This was very tasty even though it used low sugar Alfredo sauce.

I'm intrigued by your food posts so hope you continue doing them. Your cauliflower/broccoli bake sounds really good I didin't know that broccoli and some other greens can interfere with blood thinners. I'm not on any but it's still something I didn't know. See we do learn something new here every day!

My sister seems to think of you eat the same amount of greens per week that is not affected as much but I think she's wrong as he'd have to to his side of he had those veggies more than a couple times per week, something he doesn't want to do.

Vince is on a blood thinner but not Wayfarin. I've never heard about the vitamin K factor.

My mom had to watch the dark green veggies too. Ones like kale, spinach, brussle sprouts, broccoli, and asparagus mostly. My sister like it up online and it said it's not a problem if you eat those foods the same way most of the time. We will find out from the person that regulates his dosages.

@JudyEv my mom used to take Coumadin and she also had to watch certain greens. She didn't mind having to up her dose when she ate to many greens though, where my husband doesn't want to have to do that. I hope he asks more about that when he sees the person that decides his dosage.

It was. I just wish it made more servings for leftovers. It made three servings so I'll let hubby have the extra one. I still have to eat the leftover mini bell pepper nachos.
