Skillet Cornbread

As I was making my breakfast this morning, I took out a container of 15 Bean Soup from the freezer, to defrost for tonight’s dinner.
I decided to whip up a small pan of skillet corn bread to go with my dinner!
On this cool, cloudy and rainy day, I think it was a perfect choice.
What are your dinner plans?

I love cornbread, by itself, with beans and soups, with chili, with...well, you get the idea! It's so good.
I am so old fashioned, I still occasionally make homemade cornmeal mush and fry it in a skillet with syrup. My grandmothers both made it when I was little, they said it was a depression favorite because it was cheap and filling, they served it then with sorghum molasses. Then when times were better, maple syrup. A great comfort food!

The only thing wrong with comfort food is that the ones I love are usually really fattening! So now they are mostly a treat.

Chicken and mashed potatoes, probably toast points or garlic bread to go with. I don't want to leave the house if we don't have to.

That looks amazing.
Can you believe that I have never tasted cornbread?
Its not something that they serve in our area.
We haven't made supper plans just yet, my hubby is sleeping beside me on the couch as I watch an episode of the Garage Sale Mystery series. He choose the perfect time to nod off as he doesn't like this show and I do.
