There is never such a thing as too much chili, but you do sometimes have to find alternative ways to serve it. Hubby likes a dish called Potato Ole` that he gets from Taco John fast food restaurants. It has potato crowns ( like tater tots) in the bottom, with other ingredients on top. For lunch we had a homemade version. On top of the freshly made tots we had chili, refried beans and queso. Heated up a tiny bit more in the microwave. At the table we added tomatoes, onions, and lettuce and olives. Sour cream for me. Salsa if you wanted it. Tortilla chips were also present. Yes, there is still a little more chili, for one more day. Probably will top some frozen burritos. No, it was not too much. It was delicious.

Well that's a new one, I've heard of Taco Bell but not Taco John .... did Taco John have a chihuahua too?

Possibly healthier. Hubby seems to crave eating out, but our check book does not.

It has so many uses doesn't it? You sure do make some good food Heather. I am glad Bob likes that potato ole dish..sounds really good. It has been a while since I had tater tots.

I think since I did not have much food or much variety growing up I think about it a lot now. I probably would not do so much if it were not for Bob.

Yes, it is. Hubby is always wanting to eat out, but that costs quite a bit and uses expensive gas as well, so this had to take the place of out to eat.

That sounds very good, I love chili but mostly have it canned for convenience since I would not make a lot of chilli just for me, I have it on top of fried potatoes or French fries,

Yes, that is good, too. I sometimes use canned chili, but I was out, and had beef I needed to cook up. It became chili.

You are right that there's no such thing as too much chili. I love chili but putting it on tater tots is not something I ever tried (but will now). I love chili any time of the year and my favorite was is to top it with shredded cheddar cheese, minced onions and sour cream. My second favorite is to top a baked potato with chili I'm making myself hungry!!!!!

We used the cheese sauce (queso) but it could have had shredded cheese on top as well.
