Finally, the outcome!

A couple of weeks ago I wrote about looking for gluten-free ingredients to bake a cake https://www.mylot.com/post/3516330/what-a-palaver I had seen a recipe for gluten-free ‘Peach and Almond Crumble Loaf’ in ‘Good Housekeeping’ magazine, which is usually pretty trustworthy as far as good recipes go, and wanted to try it. And I had bought a punnet of peaches which were ripe and juicy. But when I tried to find the ingredients it proved particularly difficult. I managed to find two of the three gluten-free things required, but couldn’t find the third. Then I found that my friend was away on holiday anyway. Then I ate the peaches because they were ripe and couldn’t wait any longer! A couple of days ago I was in town and passing a specialist shop that sells organic produce, wholefoods etc. so I tried there. The recipe asked for gluten-free quick-cook polenta. Well even that shop only had gluten-free ordinary polenta or quick-cook polenta (handled in a factory that also handles other cereals) but not polenta that was definitely both! I opted for the certified gluten-free stuff. I thought it would then be a simple matter of picking up a punnet of peaches on the way home – but no! I tried three different shops, and none of them had any peaches! Finally I managed to get some nectarines, which I hoped would be a close enough substitute. So yesterday Big One and I set about making the cake. Between us it didn’t take too long to measure out and mix up all the ingredients, but baking it did take a long time. Then it was quite difficult to get it out of the pan! But finally it was out and still warm. I cut half of it into thick slices and cycled round to my friend’s house for coffee and a chat. Unfortunately by the time I got there the bumpy road had caused the neat slices to disintegrate somewhat, but they were mainly OK and the cake went down well. Then back home in the evening we ate more of it for dessert, topped off with raspberry sauce. So the final outcome was a success, and definitely something I would make again. I’m just glad that gluten is the only thing my friend cannot eat because the recipe uses almonds, eggs and yogurt – if she was vegan, lactose-intolerant or allergic to nuts I would have been totally screwed! Good for you. You went to a lot of trouble to do that for your friend so I'm glad it was enjoyed in the end.

I think she appreciated it, and at least now I have those ingredients in the cupboard so hopefully I will be able to try a few more recipes!

@Fleura If it were me, those ingredients would probably 'age out' in the cupboard but if the cake was nice enough I might get around to using up the ingredients.

@JudyEv I do want to try some more things. I have a whole book of gluten-free baking recipes in the cupboard too but have never used it yet because I don't have the key ingredients to hand, so maybe now I will be able to try some of those!

Just how many peaches would fill a punnet -- 5, 6 ? Never hear the term before.

Most often six. Punnet is a funny word isn't it? Apparently (I just looked it up) it means a small basket and is supposed to be derived from the use of 'pun' meaning a pound, because it holds about a pound of fruit. Never thought about it before, it's a word we use all the time though for a container of soft fruit!

I fully agree with your that "Good Housekeeping" magazine is usually pretty trustworthy as far as good recipes. I used to buy every month and I have many of my recipes coming from that magazine. Your cake surely looks delicious and I am glad it was a full success.

@Fleura When we lived in Monte Carlo Good Housekeeping was available at the local newsstand. When we moved here it is nowhere to be found. I visit their site time by time.

I've never bought it but have had back copies passed along to me from time to time, and yes I saved a lot of those recipes too!
