Homemade bread for tomorrow.

I usually dump my flour, yeast, and other ingredients in the breadmaker to make bread, because kneading it is sometimes hard and very tiring. But today, I felt like going back to the old way. It's been awhile, maybe last winter? This is homemade rye. It smells so good but I promised myself I wouldn't cut in to it until tomorrow. Hope I can hold out and wait! I love homemade bread! Do any of you make bread? Sometimes, I think it's good therapy to knead that dough and slap it around.

Years ago, I found a way to "cheat" when making homemade rolls. I started everything like normal in a heavy pan and then let it rise for the hour covered with a cloth. When the hour was past, I didn't knead it again. I just tore off chunks for the rolls, making them into smooth balls and setting them on the baking sheet. I covered them with a cloth and let them rise and then put them into the oven. They came out very well... bigger air pockets than when kneading the dough again but I liked the bigger air pockets. (Bigger air pockets means more place that hold honey and butter. YUM!) I made a lot of white bread rolls and added chunks of cheese into the center of the balls as I formed them or added some jalapeno juice before letting them rise the first time. (The cheese in the middle of the rolls made them feel heavy but they cooked through correctly and tasted wonderful. A Mexican friend LOVED the jalapeno rolls and asked me to make them for him all the time.) I've never been able to get loaves of bread to cook in the middle. I don't know what I was doing wrong.

@MarieCoyle I can't eat jalapenos since I had the rectal cancer. The cancer is gone now but the jalapenos burn like fire leaving me. (I used to love jalapeno poppers. They're jalapenos cut in half with cheese inside them, breaded and deep fried, but I can't eat them anymore.) I always used metal pans and they were the "regulation" size for loaves. I think the oven got too hot, so the outside of the loaves cooked too fast. I tried turning the heat down but that didn't help. I just stuck to making rolls instead.

I can't go near any jalapenos or I get sick...my mouth turns to fire, the insides swell, and I have even gotten anaphylactic and ended up in the ER. They taste good, they sound good, and I can't have them. But I am sure they were good! There is just nothing like homemade bread or rolls. My favorite is rye or pumpernickel, I love the dark breads the best. As for not getting them done in the middle, I've not ever had that problem. Might be too big of a loaf? Oven not quite hot enough? Also, bread cooks better in a metal pan than in glass, if that was what you were using. Not sure why, but it does, and the crust is softer, too.

I don't make bread myself, but my friend always gives me the homemade bread she makes. I particularly like her rye bread with walnut.

I honestly never thought about rye bread with walnuts. I do use caraway seeds, at least some of the time.

I bake my bread all the time, not right now because of the heat. but I did last Monday because it was a cool day.

This bread-making process seems interesting to me. I guess it is pretty tiring like you mentioned, but at the end of the day, you have some delicious bread ready. I don't know how to make my own bread, I only buy them from supermarkets and bakery etc.

My grandma made all of our bread for years, I learned from her. I made all of my bread for my kids for pretty much all their years at home, and yes, I worked a job...it was just what I did. One of my sons loves to make bread, he says he can take out his frustrations on stirring and kneading the dough! He makes some wonderful hot rolls that just melt in the mouth.

Rye is a bit heavier than white, but no, it wasn't heavy.

I'm not diabetic but I do watch what I eat pretty carefully. I love rye, pumpernickel, and wheat berry bread, not a fan of white bread.

Your bread is very professional. I like baking bread at home but usually it will spend longer time to rise the dough. So usually I will just bake a bread when I am off work.

Get someone to show you or use a bread maker. Homemade bread is the best!

I have a bread maker so I just use that. I always eat it as soon as it is done. If I wait a day it seems to start getting stale and hard. Enjoy your bread!

If I use the bread maker, I cook it on the light setting. When I take it out, I butter the sides and bottom, this keeps it soft for several days.
