Repurposed leftovers for dinner.

When I cleaned out my refrigerator, I made a mental note of what I needed to eat tonight so that I didn't have to throw things away. The last of a bit of chicken adobo, two baby bok choy that needed to be cooked, a jalapeño, and three scallions were all cooked together. I made some rice to with it, and ate the last of the pickled beets I made in the fall. A few grape tomatoes added some color. It was quick, easy, still delicious, and didn't cost me anything extra. I'm a bit like you, using what is there. If you have rice in the cupboard you always have a meal.

As usual, looks delicious and healthy! I had a small piece of salmon that was in the freezer, and steamed it with a few lemon slices. Some brown rice and some carrots I made yesterday. I just didn't have eny energy to cook more than that, and wasn't that hungry. Tired and can't seem to settle down.

@TheSojourner Today was a complete wash. After spending all of that time in the ER with the son, and finally getting out, getting meds, it was morning. No sleep at all. I brought him to my house and he slept a while, but he is taking a medicine that makes him feel hot all the time. My AC is comfortable, but I can't keep it on 65 degrees, which is what he has been doing, so he spent the afternoon at his place and I took some dinner over and stayed awhile. He seems a lot better this evening, so I came home, and I am trying to wind down. I need to take my sorry butt to bed. Thanks for checking!

@MarieCoyle perhaps you could get those ice packs. I wish I were closer and I would give you some of these that I have that come with my medicine. You could wrap them in towels and he could lay them next to him on the bed. And it would just cool air around him. I hope you are taking care of yourself.

@TheSojourner I finished a piece of frozen salmon yesterday making the salmon patties. Tomorrow I will take out a smoked mackerel and make a smoked fish dip.

@TheSojourner I love cooking but alone in my kitchen. I have hard time focusing on things or simple task if someone talks or questions me. There are time I feel like I don’t wanna cook that time I cook something quick and easy.

So colorful and yummy looking!! I am going to repurpose ground turkey that was used for taco salad . . . there's about a half cup of it left, so I think I'll turn it into soup!

It certainly is. It really is about balance. I tried to have a good meal that maybe a little more expensive, but then balanced that out for the rest of the week with others that are lesser
