chicken rice soup for dinner

Got my dinner cooking...chicken breasts simmering on the stove, celery and carrots chopped up, now waiting to add the rice at the last. Dale and our son Robert are playing golf and the temp is finally below 90F (it's 84 right now at 10:30am.) Doing some housework and feeling much better. Tammy and her husband and son Landon are on their way to Disney World for Landon's 13th birthday. Can't believe he's a teenager now. How's your Thursday going? Wish I could share some chicken rice soup with y'all.

@CarolDM Has your appetite improved any since the surgery? Of course, so many surgeries take a while to recover feeling well enough to have a good appetite.

@1creekgirl Yes it did. I will talk about in more depth eventually. But it was related. He said to a degree. Maybe not the total cause, but definitely part of it. You are the first one to mention this.

I forgot the most important ingredient in the soup: onion. I use onion powder now, real onions are hard on the stomach. But it wouldn't taste nearly as good without the onion flavor. Did they ever hire that employee you needed?

@1creekgirl I love onions, and it would pain me if I could not eat them anymore. Yes. We have a guy helping us out. He's not permanent. He has a job lined up with Ameren, the power company around here, but it could take months for his position to be filled.

@1creekgirl Not yet but I am on the edge of my seat to know what is happening..this place is slow to process applications 3 weeks!! But the housing department is trying to get us out of this lease for safety violations. Makes me nervous. But I had to take the help.

Chicken soup sounds good for supper but I laid out ham to thaw. I'm thinking a ham and cheese sandwich for supper sounds good. I thawed some chicken and noodles bor breakfast around 8 am and enjoyed that. I folded and put away clean towels from the couch and am thinking about going to sleep now. (My BP is acting up today but I'm sure that's because I'm worried about the appointment with the ophthalmologist in the morning.) I hope you have a wonderful day.

@1creekgirl He is the last step in getting help with the swelling of my eyes... None of the other doctors can do anything for me. If the ophthalmologist can't either, then I'll have to file for disability. (I'd rather be able to see to drive so I can find a job, though.) Thank you.

Too hot for proper cooking. I did cook a quiche in the oven earlier and I shall have cold, with a salad, this evening and the other half tomorrow. Plan ahead to be lazy!

That sounds delicious. I'm wondering, do you put in the rice last with the chicken soup? Are they all mixed together? We usually cook the chicken and rice separately and then serve them as is. It would be up to the diner how he/she will eat them. Or is it what we call arroz caldo, rice and chicken broth all cooked into one like the picture (Image credit: Reportr)

I boil the chicken n water and chicken broth with salt, pepper, and onion powder until done, remove it to cool, then cook the carrots, onion, and celery in the strained broth until tender, put shredded chicken back in, add long grain rice and simmer until done.

Homemade chicken rice soup sounds delicious. I like soup even on days when it's as hot as it is here and nothing beats homemade. Glad you're feeling better I'm sure Landon will have a wonderful time in Disney celebrating his 13th birthday. Time does fly
