Quick Dinner

My dinner

I had not taken anything out of the freezer to defrost. And I realized it started getting late, it needed to eat something. Diced up some onions and sautéed those in a skillet with butter and a pinch of garlic and crushed red pepper. I added spinach and then scrambled in a Jumbo egg, that had 2 yolks! Topped with some hot sauce and a slice of Swiss on the side. Voila, dinner! What is your go to meal when you haven’t prepared in advance?

We always have chicken nuggets in the freezer and throw some into a pan and heat them up... Voila! Easy dinner! A nice dollop of French Onion Dip and dinner is served! (I don't say it's a good dinner, just something to fill us up and keep the stomach from growling. )

I always have veggies in the crockpot cooked and ready to heat in the microwave. I often add an egg and cheese to mine too.

If I forgot to take out from the freezer, I go for a soup, or I prepare a fried rice with shrimps, hot peppers and garlic. Yesterday evening I made chicken cordon bleu.

I have a lot of sandwiches and pasta during the summer. I will start with the slow cooker when it gets cool.

I had a very similar dinner this evening. Omelet made with a bit of Canadian bacon, onion, green pepper, tiny tomatoes, and just a sprinkle of cheese. And a piece of toast. Hit the spot.

@SonjaRae I straightened out the refrigerator and found that little piece of Canadian bacon, and I have so, so many of those tiny tomatoes. I eat them like candy, so good!
