Weekly Menu Recap: October 16th-22nd 2022

I have gotten back into the habit of doing a loose meal plan for the week. I actually stuck to it except for two nights. One night we had too much going on and by the time I got around to making dinner there wasn't enough time to make what I had planned, and then the second night that changed it was because he child wasn't here and she child had been begging for something in particular. So without further ado, here is what we ate for dinner this week! Sunday, October 16th: I made fried shrimp and baked beans. We love seafood around here, but between the price of fresh shrimp. I refuse to get the premade pre-breaded frozen garbage. Anyway, it is expensive and between that and how long it takes to make them we don't do it very often. So it was a big hit around here. There were maybe four or five shrimp left after we finished eating. Oops, I almost forgot. We had cornbread too! Monday October 17th: I made a family recipe called Taco Bake. I have talked about this recipe in the past. We make it a couple of times a month. It's super easy and only used a couple of ingredients. It is basically a layer of a crescent roll dough, then refried beans, cooked taco meat, shredded cheese and then another layer of crescent roll dough. You bake it till the crescent dough is cooked, then top with shredded lettuce, more cheese, and sour cream if you want. With that I made Mexican rice. Another big hit. Tuesday October 18th: I found a large pack of little smoky sausages on sale when I did a Walmart grocery order last week and so on Tuesday I made pigs in a blanket. Which is another super easy recipe. You take the little sausages and wrap them in crescent roll dough and then bake them. I used the Sweet Hawaiian dough this time. With that I made baked potatoes. Again, it was something that there were not a spec of leftovers after we were done eating. Wednesday October 19th: I made a steakhouse seasoned pork loin which turned out amazing if I do say so myself. With that I made creamed corn, crescent rolls and chicken broccoli rice. I am super glad that for the most part the kids aren't super picky. I mean there are things that he child wont eat that drive me crazy sometimes. But as far as meat and variations of the recipes I make, they are both fairly good about most of the meals we eat/I make. Thursday October 20th: This was the night that I ran out of time to make what I had originally planed. I was going to make breakfast for dinner and that just didn't work out the way I had planned. So the kids had pizza rolls, chips and applesauce and Chris and I had mini corndogs. I can't cook every night. Even though I really try to. Friday October 21st: Last night it was just Chris, she child and I. He child and his best friend are up at grandma's house for the weekend. She child has been asking for sloppy joes for a few days, so last night that is what we made. I made sloppy joes and Checker's Fries. Those are just the same Fries they sell at the fast food restaurant Checkers (which is Rally's in some places). It was simple, but everybody ended up eating two sloppy joes each. So another hit. Saturday October 22nd: Tonight was another pork loin night. Tonight it was applewood bacon wrapped pork loin, cheddar and broccoli rice bake (rice with diced broccoli cheese and some other seasonings), garlic bread and baked beans. I had originally planned on making creamed corn or grean beans with it. But decided at last minute that baked beans went with the meal better, and Chris isn't a huge fan of green beans. Garlic bread replaced cresecnt rolls or corn bread which is what I usually make with pork, but we wanted something a little different. So that is what we had for dinner this week. It was a good week of meals and I am glad that for the most part they weren't super difficult. Although I really like cooking, so usually the kitchen is my happy place.

I always found it helpful to have some sort of basic meal plan for at least a few days at a time. It did seem to make things easier.

I have breakfast planned for tomorrow but have not made a plan for the rest of the meals for the upcoming week. Lol

I thought we did really good. I need to make next weeks plan either tonight or tomorrow. I am sure tomorrow we will eat fast food or at the fair.

I tried to make a good variety of stuff. Keeps us from getting bored with different food
