experimenting with leftovers: sauerkraut soup

Last night was leftovers night for dinner, but I really wanted soup since it was cold and I wasn't feeling great. I thought about making some of the tikka masala from work into some kind of soup but didn't really know what to do with it. While pulling out the leftovers so the kids could choose what they wanted from them, I found a container of bratwurst and sauerkraut left from dinner a few nights ago. Inspiration hit -- I was going to make some sauerkraut soup instead! I chopped up the leftover brats and sauteed them in a bit of butter while I diced up some celery, leaves and all, and julienned a red onion. I added the vegetables to the pot, seasoned them heavily with pepper and garlic powder, sauteed them along with the meat until they got a little softer, then added the sauerkraut and a few cups of my homemade chicken stock. After it simmered a bit, I ladled it into my bowl. I had heard of sauerkraut soup before, but never had it until last night. I don't know how authentic my recipe was, but it was delicious! I think I might be one of the best off-the-cuff soups I've ever made. Two of us each had a bowl along with a slice of crusty buttered bread. I think this might go into my rotation of soups this year, especially as a means for using up leftover sauerkraut and sausages. I've looked at a couple of recipes today and see that some variations include paprika and caraway, some call for potatoes, some have white beans in the soup. It seems that everywhere in Eastern Europe and Northern Asia has their own variation of sauerkraut soup. Have you had/made sauerkraut soup before? Do you like it? What's in yours? Photo not my own.

Yes, I was pleasantly surprised at how good it turned out! I'll definitely make it again. I don't think everyone in my household would eat it, but enough of us will that it's worth making.

I have never had this. I used to fix kraut and dogs for my daughter's father. That was a long time ago.

Interesting - I never thought to use sauerkraut in a soup (although I love sauerkraut!). Ok, gotta put that on the list . . . now I'm craving that taste!!

@much2say I agree that it's not a popular soup with the kids. Usually when I make soup these days, I make two kinds. One is a kid friendly soup (either chicken noodle or potato or something familiar for them) and the second one is whatever I actually want to eat.

@spiderdust I like sauerkraut as they are served in the north of France and here in Switzerland (with the choucroute in France and with the Berner Platte here). I was very sick years ago eating a cabbage soup and never wanted to try again.

I suppose one has to be able to enjoy sauerkraut in the first place in order to enjoy the soup. I was surprised at how the flavor of the sauerkraut mellowed during the simmering. It was definitely not a sour soup, but it did have a pleasant tang.

I would give your soup a try but Pretty and I don't eat sauerkraut. I haven't eaten sauerkraut since I lived with mom. It definitely wasn't a favorite food but I could choke it down. (Mostly, I ate the meat out of it and left the cabbage on my plate. )

@spiderdust I like cooking with cabbage but just never did like sauerkraut. I make cabbage, onions and ground beef simmered together all the time. Pretty won't eat it but I love it!

@DaddyEvil I often make something called "eggroll in a bowl" made with shredded cabbage, shredded carrots, and ground beef or ground pork (sometimes I've used ground turkey or even breakfast sausage) all sauteed together, and seasoned with soy sauce, sesame oil, ginger, and green onion. Your dish reminds me of that.

@NJChicaa Some of the variations I've seen don't call for those. I've even seen some vegan sauerkraut soup recipes today that include mushrooms. It just had a great texture.

I haven’t tried sauerkraut before but I remember this episode in the Amazing Race where the players were tasked to eat sauerkraut and many of them vomited

Unless you have talked to me about it, I don't think I have ever heard of sauerkraut soup. I used to love saurkraut. But its been a long time since I have had it.

Up until last night, that was pretty much my experience with sauerkraut too (although I've made sauerkraut casseroles with pork and potatoes for New Year's, it's a good luck food where I grew up).
