what did you have for lunch today?

Good afternoon! For a year or two, every day I had either a salami sandwich or ham sandwich for lunch. Today I decided I am so bored of the same thing daily that I decided to cook my lunch! I had a package ot gnocchi, so I boiled those for four minutes and mixed them with pasta sauce. Then I veered from package instructions to mix with pasta sauce and serve. I had some shredded mozzarella cheese, so I put that on top. To top it off, I sprinkled some Italian seasoning on top of it and put in microwave for twenty-five seconds to melt the cheese! This was a yummy lunch! In ten about ten minutes, (I usually have dinner at 3 p.m.) I will start the noodles for my spaghetti dinner, as I have 3/4 of a jar of pasta sauce and don't want to throw it away! So spaghetti for dinner today it will be! I feel much better on the increased dose of medicine I started last week. My doctor did I would notice results if there were any quicky! What did you have for lunch today? I know I eat early, so I have my dinner planned, but do you know what you will have today for dinner?

I am glad you prepared a good lunch for you instead than a sandwich. I prepared braise white chicory, wrapped in ham and topped with Swiss cheese.

Your lunch sounds delicious as does your supper. (I made a large batch of spaghetti a few days ago and finished off the last of it yesterday for breakfast.) I just ate lunch about half an hour ago. I had 1/3 of a chicken, bacon, ranch sandwich. I enjoyed it. I'm glad you're feeling better after your doctor increased your medication.

@Marty1 You're welcome. The ranch part is Ranch salad dressing. You use it instead of mayonnaise. It's delicious! I'm sorry you're depressed. Hopefully you'll feel better after while.

@DaddyEvil That chicken, bacon, and ranch sandwich sounds EXCELLENT! I have some precooked bacon, and I am buying a chicken tomorrow. I have some Ranch salad dressing. I get Ranch dressing on steak and cheese subs at Subway; Those are yummy. But not that yummy for how much they raised the price! I am going to try it.

Thank you! Both were delicious! I made quite a bit of spaghetti, too, as I had to use a 3/4 full jar of pasta sauce and never knew how much to make. I have enough gnocchi left over for one meal; enough spaghetti for several meals. I will eat them for today's meals. Tomorrow I grocery shop and buy a rotisserie chicken and lettuce and have a chicken salad. What is a chicken, bacon, ranch sandwich like? I can guess the chicken and bacon, but what do you use for the ranch? Today I am depressed, but still feeling better than before I started more medicine.

See! You can make yourself something different! I'm so glad you're feeling better with the change in your meds. Yesterday we had Meals on Wheels - Swedish meatballs, noodles, cauliflower, mixed veggies and pears for lunch. For dinner I had a breakfast burrito.

It was great making myself something I haven't had for a while! I made gnocchi a month ago as I bought two packages on sale but put those in butter, It is the way my mom made an Eastern European dish, but I couldn't make them taste good like hers. I had some pasta sauce, so I used that yesterday. What makes a meatball a Swedish meatball? It looks like you had a good meal yesterday from Meals on Wheels!

@LindaOHio I think meatballs would be better with beef and pork. My mom made her meatloaf with beef and pork, which was much better. She never made meatballs, so I don't see how they would taste with both types of meat. My mom believed that beef and pork together made things more tender, and I agree. I never had creamy gravy on meatballs. Would it be beef gravy or a special gravy?

@Marty1 I'm not sure. The traditional Swedish meatball has beef and pork and certain spices with a creamy gravy.

@Marty1 Thanks, it did go well. I eat oatmeal often. I make the old fashioned oatmeal (so much healthier) only and add my own ingredients.

@CarolDM Glad the appointment went well. When I try old-fashioned oatmeal, it is always very bland tasting. I can never seem to add enough flavoring to old-fashioned oatmeal to make it tasty. Brown sugar-flavored packets of oatmeal are my favorite flavor of the oatmeal one buys already flavored.

i enjoy gnocchi a lot, especially in homemade soup. Very tasty. If I ate a salami sandwich or a ham sandwich every day, my sodium would shoot through the roof. Two of the saltiest meats ever...not saying they aren't tasty, I just can't. I do like ham occasionally, but salami is just too processed for me. I am glad you are cooking and experimenting and learning to make new things, that's wonderful.

My sodium level used to be too low. Now it is okay. I am trying not to eat ham and salami every day. Some days I don't eat lunch at all. I don't know if I am eating lunch today, as I plan on eating turkey, stuffing, and gravy for dinner; I still have leftovers, as it was just me for dinner. I made the stuffing myself on the stovetop while my peer, who I trust around a stove/oven, was in the room. The only thing she did was tell me to find the lid she thought I had for my one pot, as she knew before I read in the directions that it had to sit for five minutes with a lid on it. I found the top and made delicious stuffing! My sister is taking me to my injection this coming week, so I may ask her to take me to the store for a few things afterward, then cook something in the oven with my peer when I see her on Wednesday instead of grocery shopping with her.

@MarieCoyle I like salami and ham; I only eat salt when it is added to food. I seldom add it to food. My sodium level was low because I was on a diuretic that flushed out too much sodium from my system. I am not on it anymore. I get my level tested when I have blood tests for my primary care doctor twice a year. My level is finally satisfactory. Thank you for telling me about the Bertolli meals! I had never heard of them. I will look for them when I need main meals; When I go to the store next, I will get bread and cottage cheese. I have two freezers full of food I can eat, so I am not buying much these days.

@Marty1 I wish I didn’t nhave to watch my sodium but I do. I just love salt. That’s great that you keep trying new things to cook. The more you try, the easier it will get and it will build your confidence! One of my sons hates to cook. He recently discovered some dinners that come frozen in a bag. I believe the brand name is Bertolii. You put the contents in a pan, add water, and cook for a very short time. He loves the one that comes with chicken and pasta. Maybe you would like those, too. You could check them out the next time you are at the store.

@Marty1 tacos bowls are great. Easy to pre make and heat up when needed. Corn and peas. But it was made in the slow cooker with cream cheese, so it was pretty good!
