Changing things up

I made pumpkin bread the other day. Recipe was put out by McKesson so it called for a goodly amount of pie spice and vanilla, because those are Mc Kesson products.
Also called for one cup of pecans.
I used to make a pumpkin bread that I put raisins, dates and nuts in and I loved it. I have been given several bags of mixed dried fruit and nuts so I added two cups to the bread batter.
The recipe called for orange juice. I did not have any, I had cranberry. The acid of the juice was to make it rise, because it is leavened with baking soda. So in went the cranberry juice.
I added one more variance, and I think it was the perfect touch. I have saved my orange peels and dried them and ground them up. I put a good spoon full of orange peel in the batter.
Bob just goes on and on about how good this pumpkin bread is. The truth is that it tasted better the day after I made it, as all the flavors blended together in perfect bliss.
I put a loaf in the freezer for next week. I also bought more pumpkin today so I can make some more.
