Belated December recipe report card

Mylotters, I’m ready to share my super-belated recipe report card from last month. Due to being sick for two weeks and behind schedule, all of last month’s nine recipes came out pretty darn good to end the year. All were good hits in my book too. And here’s the lowdown on how they fared last month last year: 1. Easy Slow Cooker BBQ Shredded Chicken-A-. This chicken dish was pretty easy as it sounds and made a perfect sandwich. After a few hours in the Crockpot, it came out so good. Leftovers turn out pretty good too. 2. Crockpot Chicken Tomato Alfredo-A-. This simple and inexpensive meal was a delight to make into the Crockpot with a few ingredients for a simple toss and throw dinner. The tomato-y alfredo sauce came out so well to coat the chicken for the sauce with both the tomato basil and alfredo sauces combined to make it pink.. Leftovers were superb. 3. Crockpot Butternut Squash, Chicken, and Quinoa Chili Soup–A+. I simply loved having this soup. It wasn’t too hot and spicy–just mild, which is perfect. It fills you up with every spoonful bite. Leftovers were fantastic the second time around. 4. Creamy Roasted Butternut Squash Pasta with Peas–A+. This was a delicious and creamy pasta dish to make in less than an hour. The butternut squash added so much flavor to the pasta along with the peas. Sadly, there were no leftovers for this dish. 5. Slow Cooker Chicken Fajitas Chili-A-. Though I never had chicken fajitas before, it did make this chili interesting by adding shredded chicken and assorted veggies into the dish. The chili powder and cayenne pepper gave me a hint of a kick. Leftovers came out pretty darn good, even if you add the sour cream on top. 6. Crockpot French Onion Soup Chicken-A+. This was another delightful frugal dinner to make with few ingredients. The French onion and mushroom soup mix coated the chicken as well as the sauce. It was tasty and hit the spot. Leftovers were also superb. 7. Crockpot Hearty Vegetarian Chili-A+ This chili was packed with vegetable goodness and provided a lot of flavor in each bite. Farro came out as a good substitute for the rice. This is perfect to have on any night. The leftovers came out perfectly well. 8 Crockpot Quinoa Chicken Primavera-A+. Another delicious dish with a creamy primavera sauce to top the chicken and combine well with quinoa. Hands down, it was another hit across the board to toss into the crockpot for a few hours to cook, 9. Crockpot Strawberry PopTart Dump Cake -A+. I loved the strawberry sauce and the strawberry cake mix to make this easy dump cake for the Crockpot. It came out oh so good. With what I’ve learned last month, I’ve made no mistakes on my first shot at making this dessert. The leftovers were equally yummy. That’s a wrap for my belated December recipe list from last month.
