Dinner was delicious, and I have about 7 one-cup servings that I have put away in the freezer.
My costs:
Sausage 1.00
1/2 onion 0.25
1/2 green pepper 0.30
Celery 0.50
Carrot 0.10
Rice 0.45
Tomatoes 0.99
Spices, herbs 0.10
Bouillon, sauces 0.20
All other meat, shrimp, tomato sauce was either given to me or sent home in doggie bag & not figured into cost.
Yield: 9+ one-cup servings
Total Cost: <$4.00 (my cost) (does not include cost of salad)
Photo is my own.

They are really simple and flavorful, when you get down to it.

Just like the song (easy because it has two chords).
Definitely looks yummy!

@TheSojourner I make a rice dish once a week. I cannot eat brown rice because it makes me sick, I know that it's healthier but it just does not go well with me.

@Dena91 I need to try to find him on YouTube. I LOVED watching his show. He was definitely a lot of fun. I'm guessing not always so "appropriate" by today's standards, but I haven't seen him for awhile.

When I lived in New Orleans from 1982-85, one of my favorite cooks was Justin Wilson. I used to have a couple of his cookbooks. I even got to meet him. He was so much fun.
The first jambalaya recipe I ever made was his recipe. Then I just started winging it, but I absolutely recommend trying his recipe first. He's as Cajun as they get...."Ah Gah-rohn-TEE!!!"

Thanks, Jojo.
It's one of my most joyful things in life (trying out different cultural cuisines).
